CHICKEN PILLOWS

A wonderful lady in our church gave this to me. In October when I broke my arm, she made this dish and brought it over to us. It was so good that I asked her for the recipe, and last night, Dec. 19th, 2006, she brought the recipe and all the ingredients over to us. Thank you Debbie Lusty!

Steps:

  • Mix chicken, softened butter and cream cheese together.
  • Place by heaping spoons full in the middle of the crescent roll and roll up.
  • Roll crescent roll in melted butter and then in bread crumbs.
  • Place on cookie sheet and bake at 350 degrees until brown, about 10-15 minutes.
  • Serve with mashed potatoes and chicken gravy.

1 (13 ounce) can white meat chicken, drained
1/4 cup butter, softened
4 ounces cream cheese
2 (8 ounce) cans refrigerated crescent dinner rolls
1/2 cup butter, melted
2 cups crushed breadcrumbs

CHOCOLATE MARSHMALLOW PILLOWS

These cookies are so yummy and fun! The marshmallow stays soft and the rest is chewy, sweet, chocolate deliciousness. They can be made so many different ways too, use chocolate chip cookie dough instead or maybe even peanut butter! Spray kitchen shears lightly with cooking spray to make cutting marshmallows easy. Chocolate Marshmallow Pillows image

Steps:

  • Preheat oven to 350 degrees.
  • In a bowl combine cookie mix, oil, water, egg and pecans until dough is soft.
  • Drop dough by a rounded tablespoons or a little less ( these are best on the small side so you can get a taste of marshmallow with every bite!) on an ungreased cookie sheet 2" apart. Slightly flatten tops.
  • Bake 7-9 minutes; take from oven and quickly press cut side of marshmallow half lightly on top of cookie.
  • Bake 1-3 minutes longer or until marshmallow just begins to soften. You can flatten the marshmallow a little if you want.
  • Cool 2 minutes on cookie sheet, remove to cooling racks. Let cool completely about 20 minutes.
  • Meanwhile in a small saucepan or double boiler, melt chocolate chips over low heat stirring frequently until smooth. Remove from heat and add cream, butter and vanilla; blend well. Beat in powdered sugar until smooth.
  • Spread frosting over cooled cookies in a swirling motion covering marshmallow. Let frosting set and enjoy!

Vanilla Cardamom Plum Jelly image

Steps:

  • Prepare jars and lids by sterilizing in hot water.
  • Line a colander with cheesecloth and place it inside a bowl.
  • Bring plums, water, brandy, lemon juice, and cardamom to a boil in large pot over high heat. Reduce heat to low, cover and simmer until fruit is soft, about 15 minutes.
  • Pour plum mixture into colander. Without pressing on fruit, let mixture drain until all juice has strained into the bowl, about 45 minutes. Add water to make 2 3/4 C juice.
  • Return juice to pot with pectin, vanilla and bring to a full boil over high heat until mixture doesn't stop bubbling when stirred.
  • Stir in sugar and return mixture to a full boil. Boil and stir for 1 minute. Remove pot from heat. Skim off and discard any foam from top.
  • Ladle jelly into hot jars, filling them to within 1/4 inch of their rims. Cover each jar with a two-piece lid. Return jars to canner.
  • Process filled jars for 5 minutes, beginning timing when water comes to a boil. After 5 minutes, turn off heat and remove canner lid. Allow jars to rest in hot water 5 minutes.

Steps:

  • Combine cream cheese, softened butter, and pepper.
  • Mix well.
  • Add the cooked chicken pieces.
  • In a separate bowl, put crushed stuffing.
  • Roll out each crescent roll and put 2 heaping tbsp. of chicken mixtures in center.
  • Fold over crescent roll and pinch edges.
  • Dip each one in melted butter and then roll in crushed stuffing.
  • Place them on a cookie sheet and cook for 20 minutes at 375 degrees F.
  • Make sauce by heating them in pan on the stove.
  • Pour a little over each chicken pillow when serving.
