You'll be surprised at the taste of this rich and cheesy easy potato soup. It really is the best potato soup recipe, ever. Steps:

  • In a large saucepan, cook bacon over medium heat until crisp, stirring occasionally; drain drippings. Add vegetables, seasonings and broth; bring to a boil. Reduce heat; simmer, covered, until potatoes are tender, 10-15 minutes., Mix flour and milk until smooth; stir into soup. Bring to a boil, stirring constantly; cook and stir until thickened, about 2 minutes. Stir in cheese until melted. If desired, serve with green onions.

My Favorite Loaded Potato Soup image

Steps:

  • 1. In a large saucepan, melt the butter and saute the onion, garlic, and carrots until both are slightly tender (about 5 minutes).
  • 2. Whisk in the flour and cook for 1 minute.
  • 3. Add the milk and drop bouillon cube in to dissolve.
  • 4. Add the potatoes. Cook over medium heat for 15 minutes until the potatoes are very soft and some of them have begun to dissolve into mush.
  • 5. Add the half and half, salt, and pepper. (May need more salt; add to taste). Simmer on the stove over medium-low heat for 25 min or until nice and hot.
  • 6. Serve soup sprinkled with bacon bits and grated cheese.

1/2 stick butter
1 small onion, diced
2 medium carrots, diced about the same size as onion
2-3 clove garlic, minced (My family loves garlic so I add 3-4 cloves. Add however much you like.)
2 Tbsp all-purpose flour

Blue-Potato Soup image

Steps:

  • Melt the butter in a 3-quart saucepan over medium heat. Add the onion and sauté until translucent, about 8 minutes. Add the potatoes, stock and bay leaf and heat to boiling over medium-high heat. Cover and simmer until the potatoes are tender, about 25 minutes. Remove the bay leaf.
  • In batches, carefully purée the mixture in a blender or food processor. (Do not overblend or potatoes will get gluey.) Place in a clean saucepan and stir in the milk or cream. Season with nutmeg, pepper and salt.

Sweet Potato Soup with Blue Corn Tortillas image

Steps:

  • Whisk together the mashed potatoes, 1 1/2 cups of the broth, ginger, allspice, and nutmeg in a medium saucepan and bring to a simmer over high heat. Reduce the heat to low and cook, stirring occasionally, for 10 minutes. Whisk in the 1/4 cup creme fraiche and more broth, if needed, and cook for 5 minutes.
  • Whisk together the remaining 1/4 cup of creme fraiche and chipotle puree in a small bowl, and season with salt and pepper. Ladle the soup into bowls and top with a dollop of the creme fraiche, some cilantro leaves and some of the tortilla chips.
  • Combine the butter, milk, cream and chipotle puree in a small saucepan and bring to a simmer.
  • While the potatoes are hot, run them though a ricer into a large bowl. Add the warm milk mixture, syrup, honey, cinnamon and salt and pepper and mix until combined.

My mother gave me this recipe for potato soup and it is extremely easy and tastes great. Substitute butter for the oil if desired. Regular bacon can be substituted for turkey bacon if desired.

Basic Potato Soup image

Steps:

  • Place potatoes into a large pot and add enough water to cover; bring to a boil and cook until tender, 15 to 20 minutes.
  • Heat vegetable oil in a skillet over medium-high heat; saute onion and turkey bacon until browned, 5 to 10 minutes.
  • Mix water and chicken bouillon together in a bowl, stirring and breaking cubes apart with a fork, until dissolved. Stir evaporated milk and garlic salt into bouillon mixture.
  • Drain potatoes, setting about 1/8 aside in a bowl. Mix the potatoes, evaporated milk mixture, onion-bacon mixture, and butter together in a pot until soup is creamy and smooth. Add the reserved potatoes to soup, breaking potatoes apart for desired texture. Bring soup to a boil; reduce heat and simmer until soup is heated through, 15 to 20 minutes.

Steps:

  • Combine everything but the blue food colouring into a saucepan.
  • Cook for about 30 minutes until potatoes become mush.
  • Mash up potatoes and veggie mixture.
  • (If you are impatient, you can put this into a blender or food processor to puree- just like Bridget did. But be careful, WARNING: make sure the soup is not boiling hot when you pour it into the blender or food processor- or else the same thing will happen to you that happened to Bridget where the contents comes spewing out all over the room. And let me tell you, you will NOT be yelling "Oh Bugger! Oh Bugger Bugger!" you will be screaming bloody murder and in the hospital with 3rd degree burns. Make sure you cool the mixture first please - remember, Bridget Jones's Diary was a movie, in real life what she did was quite dangerous).
  • After the soup is pureed, add a couple of drops of blue food colouring- how much is up to you and how blue you want your soup to be.
  • Mix soup well to blend in the food colouring.
  • Just before serving, add a little sour cream on top of blue soup if you desire and garnish with chopped chives.
  • If you are seriously a die hard Bridget fan, you can add a few strands of string- but I don't recommend it- this is meant to be a delicious, edible version of this novelty soup.

Steps:

  • Cook bacon in heavy large pot over medium heat until brown and crisp. Using tongs, transfer bacon to paper towels and drain. Crumble bacon.
  • Spoon off all but 2 tablespoons bacon drippings from pot. Add onion, leek, celery and carrots to pot. Cover, reduce heat to low and cook until vegetables begin to soften and color, about 15 minutes. Add broth, potato and wine. Bring to boil. Partially cover pot. Simmer until all vegetables are tender, about 30 minutes. Remove from heat.
  • Place cheese in processor. Add 1 1/2 cups hot soup. Blend until cheese melts and mixture is smooth. Return cheese mixture to soup in pot and stir to blend. Season soup to taste with salt and pepper. (Can be prepared 1 day ahead. Cover soup and wrap bacon; refrigerate.)
  • Stir soup over low heat until heated through. Ladle soup into bowls. Sprinkle bacon over and serve.
