BLUEBERRY BALSAMIC BARBECUE SAUCE

Not sure where this recipe came from, but I finally tried it the other day. We used it on top of chicken with risotto on the side, but it would also work great on pork or tuna as well. It is simple to make and is something different from the average sauce. You can use fresh or frozen blueberries for this recipe.

Blueberry Balsamic Barbecue Sauce image

Steps:

  • Place all ingredients in a saucepan.
  • Bring to a boil, reduce heat, and simmer 15 minutes or until slightly thick.
  • Remove from heat, cool.
  • Place blueberry mixture in a blender; process until smooth.

Steps:

  • Heat oil in a saucepan over medium heat. Add shallots and saute for 1 minute. Add balsamic vinegar and reduce by half. Add ketchup, brown sugar, and honey; bring to a simmer and cook for 5 minutes, stirring constantly.

2/3 cup balsamic vinegar
3 cups ketchup (recommended: Heinz)
1/3 cup brown sugar
1/3 cup honey

Steps:

  • Add all the ingredients for the sauce into a saucepan and cook for 2 hours over medium-low heat. Remove the sauce from the heat and place into a food processor or blender and puree. Strain the sauce and set aside.
  • Preheat grill over medium-high heat.
  • Place the ribs onto the grill and brush with sauce. This will glaze the ribs while they cook.
  • The blueberries add a subtle sweetness to the sauce to play off the heat of the chiles and the acid of the vinegar.

3 pints blueberries
1/2 cup brown sugar
1 cup balsamic vinegar
1 cup red wine vinegar
1 clove garlic, minced
1 onion, sliced
1 habanero pepper
1 dark beer
1 tablespoon ground coriander
1 tablespoon ground cumin
1 tablespoon ground coffee
1 tablespoon chipotle powder

  • In a small bowl, stir together 1 tablespoon of the kosher salt, the garlic powder, and 1 teaspoon of the black pepper. Store the spice rub in a mason jar on the countertop for up to a year or use immediately.
  • On a parchment paper or foil-lined sheet pan, arrange the pork chops in a single layer. Sprinkle a generous pinch of the spice rubs onto each side of the chops. Be sure to rub the seasoning into the chops with your fingers. Discard any remaining spice rub*.
  • Pile the charcoal briquets in your grill's bottom and cover them with lighter fluid. Light the coals immediately and allow them to heat until they are glowing red under an ashy exterior.Alternatively, if you have a gas grill, you'll only need a fifteen minute head start on preheating the grill. When you're ready to grill, simply preheat the grill to medium-high.
  • In a sauce pan, heat the olive oil over medium-high heat. When the oil begins to shimmer in the pan, add the red onion and garlic. Sauté these until they are glossy and fragrant or about 3 minutes. The aromatics should take on a bit of color, however, if they start to brown too much, lower the temperature.

  • Preheat the oven to 300 degrees F, with a rack placed in the center of the oven. Line a large rimmed baking sheet with aluminum foil and set aside.
  • Flip one rack of baby back ribs over and insert the tip of a butter knife under the membrane that covers the back of the rack. Wiggle the knife to loosen the membrane. Use a paper towel to hold one the and pull it off. Repeat with remaining rack.
  • Combine the seasonings in a small bowl and mix well with a spoon or small whisk. Sprinkle the rub generously on both sides of the baby back ribs. Place the ribs bone side down on the baking sheet and bake for about 2 hours, or until the ribs are slack when you lift them and the meat is almost ready to fall off the bone.
  • While the ribs are in the oven, make the barbecue sauce. In a medium saucepan over medium heat, stir together the blueberries, honey and balsamic vinegar. Bring to a boil, then lower heat to a simmer, and cook until the blueberries have burst and released their juices, about 5 minutes. Add the red pepper flakes, cayenne pepper (add in increments if you are sensitive to spice), shallots and garlic and let it cook for about 5-7 minutes more. If you have an immersion blender, blend the sauce together to puree the sauce into a smoother consistency. You may also use a blender or a masher.
