BOB'S STUFFED BANANA PEPPERS
This is an awesome recipe for banana peppers stuffed with an Italian sausage mixture and baked in a delicious tomato sauce. We get requests to make them for the guys my husband works with all the time.

Steps:
- Cut off tops of peppers, and remove ribs and seeds. Chop edible portions of tops; set aside. Bring a large pot of salted water to a boil. Add peppers, reduce heat, and simmer until tender but still firm, about 5 minutes. Drain and set aside.
- Heat butter in a medium skillet. Saute reserved chopped pepper, onion and celery until tender, 3 to 5 minutes. Stir in crushed tomatoes, tomato sauce and garlic. Season with basil, oregano, 1 1/2 teaspoons salt and 1/4 teaspoon pepper. Simmer uncovered for 10 minutes. Preheat oven to 350 degrees F (175 degrees C).
- Meanwhile, in a large mixing bowl, combine egg, 1 teaspoon salt, 1/4 teaspoon pepper, Worcestershire sauce and Parmesan. Mix in hot sausage, mild sausage, bread crumbs and 1 cup of the tomato sauce mixture.
- Using a piping bag or sausage stuffer, fill each pepper with the meat mixture. Place in a 3 quart casserole dish, and pour remaining tomato sauce mixture over peppers.
- Bake uncovered in preheated oven for 1 hour.

STUFFED CABBAGE
This recipe calls for freezing a head of cabbage overnight to soften the leaves to wrap around a beef and rice mixture.

Steps:
- Place cabbage head in freezer and freeze overnight. Remove from freezer, thaw and peel away leaves.
- Preheat oven to 350 degrees F (175 degrees C).
- Combine the beef, egg, onion, rice, salt and pepper. Mix together well. Take a small handful and form into a small roll or ball. Place into the center of a cabbage leaf. Fold the sides of the leaf over and roll the ball up into the leaf. Place seam side down in baking dish. Continue until all of the filling is used up.
- Mix together the soup with a 1/2 can water; pour over stuffed cabbage.
- Bake uncovered at 350 degrees F (175 degrees C) for 1 hour; baste often with the sauce.

I love the taste of cabbage rolls, but not the time of rolling each individual roll. Here is my adaptation. Taste just like cabbage rolls w/o all the work!

Steps:
- Roughly shred cabbage heads.
- Place in large pan, cover with water, add salt, and butter. Cook until tender, drain.
- Mix together in large bowl ground beef, sausage, bread crumbs, rice, garlic powder and onion flakes.
- Press into bottom of large casserole dish.
- Place cooked cabbage on top.
- Cover with tomato sauce.
- Salt and pepper to taste.
- Bake at 350 for 40-45 minutes.

BOB EVANS® STUFFED CABBAGE
Cabbage leaves stuffed with rice, green peppers, and Bob Evans® Original Roll Sausage are slow cooked in a spicy tomato sauce.

- Place cabbage in microwave-safe bowl. Add 2 Tbsp. water. Cover and heat on high 5 minutes. Remove 8 leaves and trim out thick stems. Set aside.
- In large bowl, combine sausage, rice, green pepper, onion and chili powder. Mix until blended. Place 1/2 cup sausage mixture on each cabbage leaf and roll up. Place in slow cooker. Combine tomatoes, tomato sauce and chili powder. Pour over cabbage rolls. Cover and cook on low for 6 to 7 hours or until sausage is cooked.
