Found this in Bills ChuckWagon cook Book. Made a few changes to make this better.

Bob's Daring Beer and Wine Stew image

Steps:

  • In a large papper bag add flour,salt & pepper,and Mrs dash. Add chunks of meet.Shake to coat... In a large cast iron skillet fry bacon till all most chrisp. Remove,drain on a papper towl and cut into chunks...
  • Into the bacon drippings add meat. Brown on all sides...Now add seasonings,beer,wine.. Partially cover and simmer for abought 1 1/2 hours..
  • Uncover. Remove bay leaf. Add carrots,onion,and potatoes..Partially cover and simmer for abought 1 1/2 hours. You may need add a little more beer or wine... Serve over egg noodles.

3/4 cup(s) flour
- salt and pepper,to taste.
3 pound(s) beef chuck,lean and cot into cubes
2 teaspoon(s) mrs dash,onion and herb seasoning
1/2 pound(s) bacon,cooked chrisp
1/4 cup(s) tomato paste
1/2 cup(s) white wine, medium
1/8 teaspoon(s) thyme
1/4 teaspoon(s) garlic,minced.
6 - parsely sprigs,chopped
1 - bay leaf
3 cup(s) beer,your choice.i used dark beer,better flavor.
6-8 - medium carrots,cut into rounds
4 medium potatoes,cut into small chunks.
2 large onions diced
- hot cooked egg noodles.

HEARTY BEEF STEW WITH RED WINE

This also can be made in a crockpot. I add different veggies, cubed squash, and 1/2 can baby peas, just added the peas the last 5 minutes of cooking. This is great on a cold winters day. Enjoy!

Hearty Beef Stew with Red Wine image

Steps:

  • Combine flour and pepper; coat beef cubes.
  • Reserve remaining flour mixture. In 3 tablespoons of hot oil, brown beef, and remove when brown.
  • Sauté onion, celery and garlic until tender.
  • Return beef to pan.
  • Add beef, broth, wine and spices.
  • Bring to a boil, stirring occasionally.
  • Reduce to simmer, cover and continue cooking for 1-3/4 hours.
  • Add remaining vegetables and cook covered another 45 minutes longer or until meat and vegetables are tender, but not mushy.
  • Thicken broth if necessary with 2 tablespoons of the flour mixed with 2 tablespoons water.
  • Simmer until thick.

2/3 cup flour
1/4 teaspoon pepper
3 lbs beef chuck, cut in -1
1/3 cup olive oil
1 cup coarse onions, chopped
1 cup celery
3 garlic cloves, crushed
2 (21 ounce) cans condensed beef broth
1 bay leaf
1/4 teaspoon dried thyme leaves
1 tablespoon parsley
6 small potatoes, halved
6 medium carrots, cut in large slices
2 small onions, quartered
1 lb mushroom
1/2 cup water or 1/2 cup beef broth

Steps:

  • In a hot dutch oven cook bacon with oil till almost crisp. Put flour in a bag, add meat and shake to coat meat.. Remove bacon from oven with slotted spoon, cut up bacon and set a side.. Brown beef chuck in bacon drippings on all sides..
  • Now add garlic and onion cook 4-5 minutes.. Add beer, wine, bay leaf parsley, and thyme.. Partially cover and cook over med heat for 1 1/2 hours.. Remove bay leaf and add carrots. You may need to add more beer, cook for about one hour more... Serve over cooked noodles..

Steps:

  • In a large Dutch oven cook bacon till crisp. Put flour salt and pepper and dried thyme in a pepper bag. add cubed meat. Shake till meat is covered. Remove cooked bacon from Dutch oven and drain on papper towel Brown beef in bacon grease on all sides.
  • Once meat has been browned. Add beer, wine, tomato paste, parsley, onion, bay leaf and what is left in the bag of flour mix.. Bring to a boil. then reduce heat and simmer for 1 1/2 hours, partially covered.
  • Remove bay leaf. Then add potatoes, garlic, and carrots. At this point I add 1 teaspoon of hot sauce, you can leave it out. I like my stew with a bite. Partially cover and simmer for one hour more. Serve over cooked egg noodles

  • Heat large heavy pot over medium-high heat. When hot, add 1 tablespoon of the oil, swirling it around bottom of pot. When oil is shimmering, carefully add beef pieces, leaving at least 1/2" space between pieces. Crowding the beef will cause it to steam rather than brown, so this step will need to be done in batches. Sauté beef until deeply browned on two sides, about 5 minutes per batch. Remove beef to a plate after each batch is browned, adding another tablespoon of oil to the pot prior to adding more beef. When the final batch is browned, add all browned beef back to the pot, along with any accumulated juices from the plate. Add beef broth, Guinness, red wine, tomato paste, sugar, thyme, Worcestershire sauce, soy sauce, and bay leaves. Stir to combine. Bring mixture to a boil. Reduce heat to medium-low, then cover and just barely simmer for 1 hour, stirring occasionally.
  • While stew is simmering, prepare potatoes, onion, carrots, and garlic. Heat a large skillet over medium heat. Add butter; melt. Add potatoes, onion, and carrots. Sauté until onions are softened, about 15 to 20 minutes. Stir in garlic and sauté for two minutes more. Remove from heat.
  • Add sautéed vegetables to stew and simmer uncovered for another 45 minutes. Potatoes and beef should be very tender. If the beef isn't fork-tender, continue to simmer until it is. Taste test and add a bit more salt and pepper, if needed. Discard bay leaves. Spoon off any obvious fat from top of stew. Serve hot in individual bowls, with fresh parsley sprinkled over the top.
