BODY NOURISHING COMFORT SOUP

This recipe was given to me by my best friend. It is really yummie and good for you too! So simple to make!

Body Nourishing Comfort Soup image

Steps:

  • Chop all the vegetables, add a drop of olive oil to the pot and add in the diced onion, add the mushrooms in next.
  • Let these sautee for a few moments. (In the meantime boil the kettle).
  • Then add in all the vegetables, use enough hot water so that its covering the vegetables. Then add canned tomoatoes, simmer all vegetable until soft.
  • Dissolve the vegetable stock cube in a little boiling water in a glass jug and add to the pot.
  • When the veggies are soft, allow to cool.
  • Depending on how you like your soup, you can blend the entire pot of veg once cooled OR you can take about 1/3 of the vegetable away blend 2/3 then add back the more solid 1/3. All depending on your taste.
  • Add a little salt and pepper if required.
  • Serve with Bread.
  • Enjoy!

5 large carrots
2 sweet potatoes
1/2 butternut squash
1 red onion
6 -8 mushrooms
1 -2 stick celery
14 ounces chopped tomatoes
1 vegetable stock cube

COMFORT SOUP (SPINACH & MEATBALLS)

This simple soup is a savory dish passed on to me by a childhood friend's mother. She raised 6 kids and knew how to please a hungry crowd (the boys are all over 6'5") on a tight budget in a hurry! Soup is comforting but I have found this one to be especially soothing to body and soul. UPDATE: the meat juices are what make the flavor of the broth, so if the beef is too lean (or not enough is used), there won't be an oily sheen to the soup, which is what gives it the wonderful taste.

Comfort Soup (Spinach & Meatballs) image

Steps:

  • Heat chicken broth to boiling.
  • Meanwhile, combine beef, cheese and pepper.
  • Knead lightly to mix but don't overdo it.
  • Roll into 1 inch meatballs.
  • Drop meatballs into boiling broth and reduce heat to simmering (medium low usually).
  • Cook for 10 minutes.
  • Add spinach and cook for 10 more minutes.
  • Serve with french bread if you have it.

4 cups chicken broth (or 2 cans)
1 lb ground beef (or turkey if you prefer)
1/4 cup parmesan cheese (Kraft is fine)
1/8 teaspoon ground black pepper
1 (10 ounce) package frozen spinach
