WALNUT TART

Meet the Cook: The first time my husband tried this, he said there ought to be a law against anything tasting so good! I've served it at picnics and family occasions...and even once at a bridal shower. It's fine either as a dessert or for breakfast. We are the parents of three grown children and grandparents of two. -Rovena Wallace, Trafford, Pennsylvania

BOOZY CHERRY WALNUT TART

Cherries in winter may sound counterintuitive, but like frozen peas and corn, frozen cherries are, well, pretty good. Baked on a bed of easy press-in crust, the boozy cherries sink into the almost-frangipane mixture which soaks up much of the juiciness cherries are known for. The trick to a nice, crunchy bottom tart shell is baking longer than you think, so make sure you give it the full time recommended.

Steps:

  • Make the crust: Mix flour, sugar and salt in a medium bowl. Pour butter over the dry ingredients and, using your hands, mix together until you've got a Play-Doh-like texture.
  • Press crust into a 9-inch tart pan with a removable bottom. (Alternatively, use a 9-inch cake pan lined with parchment; the crust can go about 3/4 inch up the sides of the pan.) Set aside.
  • Make the filling: Heat oven to 350 degrees. Toast walnuts on a rimmed baking sheet until well browned and fragrant, 5 to 8 minutes; remove from heat and let cool.
  • Pulse walnuts, butter, 1/4 cup/50 grams sugar, 2 tablespoons flour and a pinch of kosher salt in a food processor until finely ground. Add the egg and pulse just to blend. Spread walnut mixture on the bottom of the prepared crust.
  • Toss cherries with bourbon, orange zest, remaining 1/3 cup/65 grams sugar, remaining 3 tablespoons flour and a pinch of salt. Scatter cherries over the walnut mixture and sprinkle with a bit more sugar to finish.
  • Place tart on a rimmed baking sheet lined with foil and bake until the crust is golden brown at the edges and the cherries are thick and saucy, 55 to 65 minutes. Let cool at least 30 minutes before removing from the pan and slicing. (If you can wait an hour to let the juices fully settle, even better.)

1 2/3 cups/215 grams all-purpose flour
2 tablespoons granulated sugar
1 1/2 teaspoons kosher salt
3/4 cup/170 grams unsalted butter (1 1/2 sticks), melted
1 cup/90 grams walnut pieces or halves (or use almonds)
2 tablespoons unsalted butter, chilled
1/4 cup plus 1/3 cup/115 grams granulated sugar, plus more for finishing the tart
5 tablespoons/40 grams all-purpose flour
Kosher salt
1 large egg
1 pound/455 grams pitted cherries, thawed if frozen
2 tablespoons bourbon
2 tablespoons finely grated orange zest

APPLES WITH HONEY AND CRUSHED WALNUTS

Tradition is a beautiful thing, unless it requires you to make something you don't enjoy making or eating. For me, that's charoset. Classically, it's an apple-walnut mixture (occasionally including a touch of cinnamon or dried fruit, or a combination) that ranges from chunky-relish to chunky-paste, and it's never been my favorite thing on the table. I've always wanted it tangier, crunchier and, well, I wanted a salad. This is that salad. It's meant to be more acidic than sweet, but adjust with vinegar and honey as needed to suit your preference. A note: Nearly everyone who ate this salad said it was their favorite part of the whole meal, which bruised my matzo ball ego, but I thought you should know.

Steps:

  • Heat oven to 325 degrees. Spread walnuts in an even layer on a rimmed baking sheet. Toast walnuts until golden brown and fragrant, 8 to 10 minutes. (You can also do this in a toaster oven.) Let cool. Using your hands or a knife if you like, crush or finely chop walnuts. Set aside.
  • Thinly slice apples (with a mandoline or a sharp knife) any way you please. (Rounds are excellent if you don't mind eating the edible core.) Scatter the slices onto a large serving platter or bowl. Drizzle 2 tablespoons apple cider vinegar over apples, and season with salt and pepper; give them a little toss and drizzle with 2 tablespoons honey. Taste an apple slice and adjust seasoning with more vinegar or honey, as needed. Sprinkle with walnuts, and finish with a drizzle of olive oil, flaky salt and pepper.

1 cup raw walnut pieces or halves
4 Honeycrisp or Pink Lady apples, or a comparable sweet-tart variety
2 tablespoons apple cider vinegar, plus more to taste
Flaky sea salt and freshly ground black pepper
2 tablespoons honey, plus more to taste
Olive oil, for drizzling

  • Roast walnuts ahead of time. Place them in a dry skillet over medium-low flame. Roast, tossing occasionally, until they begin to brown and become fragrant, 4 to 6 minutes. Transfer to a plate or bowl and let them cool completely. Chop or break into small pieces.
  • Prep the cherries and the butter slightly ahead of time. Using a sharp knife, halve the dried cherries and place them in a small saucepan. Add the bourbon and heat over a medium flame. As it starts to bubble, reduce heat and barely simmer for 2 to 3 minutes. Transfer to a bowl and pop it in the fridge to chill for at least 10 minutes. Drain completely and keep chilled until ready to use.
  • Cut butter into 1/2-inch cubes, place in a bowl and pop in the freezer while you prepare the dry ingredients. (If you're not baking until later, just keep the butter in the fridge—the point is, you want the butter to stay as cold as possible until you're actually baking the scones.)
  • Combine flour, sugar, baking soda and salt in a food processor. Pulse several times to thoroughly mix everything. Beat egg in a bowl and add 1/3 cup half & half. Set aside.
