- Rinse and dry potatoes with a paper towel and transfer to a large bowl. Add olive oil, seasoned salt, salt, and black pepper; mix well. Spread potatoes on a baking sheet.

I created this on accident. After already starting the rest of the meal one night, I realized I didn't have enough potatoes for a different recipe. So I sliced them and started digging through my spices for ideas on seasoning them. A little red pepper gives these potatoes a little zip! You don't need to bother to peel them. They're great with the skins on.

- Preheat oven to 400'.
- Scrub potatoes, leave skins on and slice thinly (About 1/8 -1/4 Inch Thin).
- Place potatoes and seasonings in a large bowl and toss to coat (You may shake them in a large ziplock bag if you prefer).
- Lightly drizzle about 1 tablespoons olive oil on large cookie sheet or jelly roll pan.

- Put oven rack in the lower third of oven and preheat to 450.
- Halve the potatoes lengthwise, then cut the halves lengthwise into 4 wedges. Finally, cut into bite-sized pieces.
- In a large bowl (one with a lid is better), toss with oil, salt, rosemary and pepper.

Steps:
- In a saucepan large enough to hold all of the potato chunks, bring water to a boil.
- Add potatoes, and boil for 2 minutes. You are not trying to cook the potatoes through at this point.
- In a large bowl, combine the oil, garlic, rosemary, salt and pepper. Be generous with the salt, or the potatoes will be bland.
- Drain the potatoes well, and add to the oil and garlic mixture.
- Mix gently, but thoroughly.
- Cover bowl, and let sit for at least 20 minutes, and up to 2 hours.
- Preheat oven to 450.
- Place potato mixture in a roasting pan.
- Bake for 20 minutes.
- Toss potatoes with a spatula.
- Return to the oven for 10 more minutes until cooked through and golden brown.
- Check seasonings, and add more salt or pepper as needed.
- Serve immediately.

FAST OVEN ROASTED POTATOES
Love to serve these potatoes, when we are tired of mashed or baked. They are crispy on the outside and white and meaty inside. The microwave really speeds up the cooking time. Red potatoes work the best, they turn out on the sweet side, but regular Idaho or russets are fine. Margarine works the best, as butter tends to burn.

- Place in microwavable bowl, with water.
- Cover.
- Microwave on high for 6 minutes.
