BRAISED ONIONS

These onions are braised withbutter and sugar.

Braised Onions image

Steps:

  • Peel the onions, and trim roots, leaving enough to keep onion intact. Cut them lengthwise in halves or quarters, depending on their size.
  • Place in a large skillet with butter, sugar, salt, pepper, and enough water to come halfway up sides of onions. Bring to a boil over medium-high heat, reduce to medium-low, and cook, covered, until the onions are tender, about 20 minutes. Uncover, raise the heat to medium, and cook, stirring occasionally until caramelized, 30 to 40 minutes.

3 pounds red and white onions (about 15 small onions)
3 tablespoons unsalted butter
3 tablespoons sugar
1 teaspoon coarse salt
1/4 teaspoon freshly ground pepper

Steps:

  • Melt butter and oil in a heavy saucepan.
  • Add onions and sear over high heat for 2 minutes.
  • Add salt, pepper, and broth; reduce heat.
  • Cover and simmer for 10 minutes or until just tender.
  • Add whisky and let the sauce cook down slightly.
  • Serve with beef, lamb, or chicken.

2 tablespoons olive oil
2 tablespoons butter
4 large onions, peeled and cut into 1 inch slices
1 teaspoon salt
1/2 teaspoon finely ground black pepper
1/4 cup beef broth or 1/4 cup vegetable broth, of choice
1/4 cup Scotch whisky

Steps:

  • Heat butter and oil in a large heavy-bottomed sauté pan.
  • Add onions and sear on high for 2 minutes.
  • Add salt, pepper and broth.
  • Reduce heat and simmer 10-12 minutes.
  • Add bourbon and cook down for 3 minutes.
  • Add sugar, if using.
  • Delish!

Braised Onions with Orange and Balsamic Vinegar image

Steps:

  • Bring large pot of water to boil. Add onions and cook 2 minutes. Drain and cool. Peel onions and cut off root ends.
  • Melt butter with oil in large nonstick skillet over medium heat. Add onions; sauté until brown and tender, about 10 minutes. Add orange juice, vinegar and 2 tablespoons water to skillet. Reduce heat to medium-low. Simmer until liquid is reduced to glaze, about 4 minutes. Season with salt and pepper.

2 pounds cipolline onions or boiling onions
2 tablespoons (1/4 stick) butter
2 tablespoons olive oil
6 tablespoons orange juice
6 tablespoons balsamic vinegar
2 tablespoons water

Steps:

  • In a small bowl, combine mustard, oil, honey, sage, pepper and salt.
  • Slice onions crosswise into 1/2 inch thick slices.
  • Place in single layer in greased 13x9 inch baking dish.
  • Brush generously with mustard mixture.
  • Cover with foil, bake 425F (220C) oven for 15 minutes.
  • Remove foil and bake 10-15 minutes longer or until tender.
