STRAWBERRY JAM
I can't really take credit for this recipe. It comes from the instruction sheet that is inside the Sure-Jell box, but it is a tried and true recipe. I love making my own jams and jellies and my family loves eating them.

Steps:
- Pour crushed berries into large boiler.
- Measure sugar into seperate container and set aside.
- Stir package of Sure-Jell into strawberries.
- Add butter.
- Bring berries and Sure-Jell to a full rolling boil (a boil that does not stop bubbling when stirred) then add sugar.
- Stir constantly.
- Stir in sugar, quickly.
- Return mixture to a full rolling boil and boil exactly 1 minute, stirring constantly.
- Remove from heat.
- Skim foam from top with metal spoon.
- Ladle quickly into jars that have been cleaned and preheated.
- Clean rims of jars with clean hot cloth.
- Place heated lids (lids that have been placed in simmering water for 1 minute) on jars and tighten rings.
- Place jars in water bath canner for 5 minutes, then remove from canner, turn jars upside down for 5 minutes.
- Return jars to upright position and let cool completely before storing.

STRAWBERRY FREEZER JAM
This strawberry freezer jelly is quick, easy and delicious on toast, ice cream or even in milkshakes! Keep jars of this in the freezer and take them out when you are ready to use them. Once thawed, they will last approximately 1 month in the refrigerator. If it lasts that long!

Steps:
- Mix crushed strawberries with sugar, and let stand for 10 minutes. Meanwhile, stir the pectin into the water in a small saucepan. Bring to a boil over medium-high heat, and boil for 1 minute. Stir the boiling water into the strawberries. Allow to stand for 3 minutes before pouring into jars or other storage containers.
- Place tops on the containers, and leave for 24 hours. Place into freezer, and store frozen until ready to use.

- Combine strawberries, sugar, and 3 tablespoons brandy in a heavy Dutch oven; bring to a boil. Reduce heat; simmer until reduced to 1 1/2 cups (about 45 minutes), stirring occasionally.
- Remove from heat; stir in 1 tablespoon brandy and vanilla. Spoon into a bowl; cool to room temperature.
- Cover and chill.

BRANDIED STRAWBERRY FREEZER JAM RECIPE - (4/5)

Steps:
- In a large bowl, crush 1 cup strawberries with potato masher. Continue adding berries and crushing until there are 4 cups of berries. In a small bowl, stir together sugar and pectin. Add to strawberries, stir in brandy and zest. Stir for 3 minutes. Ladle jam into clean half pint freezer safe containers, leaving a 1/2" headspace. Seal and label. Let stand at room temperature for 30 minutes. Store in freezer up to 1 year or in refrigerator for 3 weeks.
BRANDIED STRAWBERRY WINE
This recipe was developed for the 11th RSC Contest. In the process of coming up with something totally different I ended up with this. I think the honey and brandy really accentuate the sweet strawberries and then mixed with the wine, mmmmm. I used a sweeter Chardonnay but any white wine would work. The strawberry mixture should be made up ahead of time so that it can cool. Cooking time does NOT include cooling time. I enjoy mine with a few ice cubes. This would be perfect for brunch or Valentine's Day.

- In a small saucepan over medium heat, combine the honey, blood orange juice, and sugar and heat until the sugar dissolves. Add the brandy and simmer for about 5 minutes.
- Add strawberries and continue to simmer for another 5 minutes or until the strawberries have lost their firmness.
- Remove from heat and let cool.
- When the stawberry mixture is cool, place in a blender and puree for one minute or until smooth. Add wine and stir.
- Pour into wine glasses (with ice if desired) and garnish with a ripe strawberry.

- Chop strawberries into around 1cm bits.
- Put strawberries in a pot and stir for at least 10 minutes.
- Next add ALL sugar and lemon juice and stir for around 2 minutes, and then leave it to boil for around 15 minutes.
- After that it should generally be ready, pour into a jar or anything, really and leave the lid off to cool the jam, at this time it will be very hot.
- Leave the jam to cool for at least 15-30 minutes and then it will be ready.
- (NOTE: This is not a thick jam. It should still have chunks of strawberries in it).

Steps:
- Wash, dry and hull the berries. If berries are large, halve them; lightly crush about 1/3 of the berries. Place the berries into a large non aluminum pot and gently fold in the sugar and the lemon juice. Cover and set aside to macerate in a cool place for several hours, or overnight.
- Bring the mixture to a boil over medium-high heat; then reduce heat to low and simmer for 9 to 15 minutes, stirring often with a stainless steel spoon, until jam just begins to thicken.
- Remove from the heat and let jam come to room temperature, about 1 hour, then cover and cool in the refrigerator for 2 to 3 hours.
- Simmer again for 9 to 15 minutes, stirring often, until jam is thickened.
- Working quickly, pour into 8 8-ounce prepared and sterilized canning jars. Fill the jars to within 1/2 inch of the top. Wipe the rim with a clean damp cloth and seal them with 1/4 inch of melted paraffin. Cool the jars overnight. Wipe and seal again if necessary. Store in a cool, dark place.

KITTENCAL'S EASY REFRIGERATOR STRAWBERRY JAM
Considering how easy this is to make, it makes a great strawberry jam, good on waffles, pancakes and for a cheesecake topping! It will keep in the refrigerator covered for up to 2 weeks.

- In a bowl mash the strawberries using a potato masher or fork.
- In a large skillet stir together the mashed berries, sugar, pectin and lemon juice (starting with 2/3 cup sugar and adding in more desired I found that 2/3 cup plenty for me!) boil until slightly thickened about 5 minutes, add in a couple drops of red food colouring if needed.
- Transfer the mixture to a bowl to cool.
- Store tightly covered in a glass jar in the refrigerator until ready to serve.
