Brandy's Party Meatballs image

Steps:

  • 1. Brown the meatballs with the onion.
  • 2. Place in the Crock Pot with the rest of your ingredients.
  • 3. Stir to mix.
  • 4. Cover and cook on low until hot and coated well (about 2 hours).
  • 5. You can leave in Crock Pot on warm until ready to serve.

1 pkg frozen meatballs (thawed slightly) or make your own. I have done both depending on time, 18 oz.
1 bottle Sweet Baby Ray's chipotle bbq sauce
1/2 small onion, chopped
2 tsp raspberry jelly or jalapeno jelly
garlic powder, to season

Steps:

  • Mix together the lean ground beef, onion soup mix, egg and cracker crumbs.
  • Shape into meatballs and brown in a skillet with a little olive oil.
  • Place meatballs into slow cooker.
  • Mix together the last 5 ingredients and pour over meatballs.
  • Cook on Low for 5 to 6 hours.

2 lbs lean ground beef
2 packages lipton dry onion soup mix
1 egg
1/4 cup cracker crumb
1/3 cup brandy
1/2 cup ketchup
1 tablespoon dry onion soup mix
1 cup barbecue sauce
1/2 cup water

Swedish Meatballs image

Steps:

  • In a medium bowl, soak bread crumbs in warm milk while you prepare the onions.
  • In a large skillet over medium heat, melt 1 tablespoon of butter. Stir in onions and a pinch of salt and cook until pale golden, about 3 to 4 minutes. Transfer half the onions to a large bowl and set aside.
  • Prepare sauce: Add brandy to skillet with onions and ignite with a long match or igniter (or if you're using a gas stove, just swirl pan, brandy should catch fire). Let flame die down, then add the remaining butter, letting it melt. Sprinkle in flour. Sauté until flour browns, about 3 minutes. Whisk in broth, cream and 1/4 teaspoon salt. Simmer, whisking, until reduced to a sauce, about 5 minutes. Add mustard, if you like, and season with more salt, if needed.
  • To large bowl with onion, add remaining 1 3/4 teaspoons salt, soaked bread crumbs, beef, pork, eggs, garlic, pepper, allspice, ginger, nutmeg and cloves. Roll into 1-inch balls (about 2 tablespoons each), placing them on one or two rimmed baking sheets as you go.
  • Heat broiler. Drizzle meatballs with oil. Broil meatballs, switching pans' positions if using more than one so they both get close to the broiler, until well browned all over, 5 to 10 minutes. Serve with gravy, garnished with herbs.

THE BEST MEATBALLS

I never knew how to make good meatballs until I found this recipe. I normally make mine with just ground beef and they still taste great. I've used the combination of pork, beef and veal and they are equally good. Definitely use fresh bread crumbs and freshly grate your cheese instead of using the canned variety...it really does make a difference.

Steps:

  • Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.
  • Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold its shape if rolled into meatballs. (I usually use about 1 1/4 cups of water). Shape into meatballs.
  • Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (If your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.)

  • In food processor, process vanilla wafers into fine crumbs. Pour crumbs into large bowl. Add nuts, 3/4 cup powdered sugar and 2 tablespoons cocoa; stir to combine.
  • In small bowl, stir together brandy and corn syrup until well combined. Add to dry mixture; stir until dough-like mixture forms.
  • Roll mixture into 1-inch balls. Roll each ball in additional powdered sugar. If desired, place each in mini paper baking cup. Store in airtight container up to 2 weeks.
