Steps:

  • Bring a large pot of salted water to a boil. Cook pasta for 8 to 10 minutes, or until al dente, drain and rinse with cold water. Set aside.
  • In a large skillet, heat oil over medium heat add sliced sausage to the skillet and cook.
  • Add red pepper flakes and continue sauteing until sausage is no longer pink.
  • Add onion and garlic to skillet and continue until onion softens.
  • Stir in tomatoes and salt, (if using fresh tomatoes, sauté them for 3 minutes until softened) then add light cream and Parmesan cheese; simmer gently until mixture thickens (about 5 minutes).
  • Stir in the cooked pasta and basil, and heat through, about 3 minutes.
  • If desired, garnish with a sprinkle of fresh basil or shaved Parmesan cheese.

5 bratwursts (any flavor)
3 cups bow tie pasta
2 tablespoons olive oil
1/2 teaspoon red pepper flakes
1/2 cup onion, diced
3 garlic cloves, minced
1 1/2 cups fresh tomatoes, chopped
1 1/2 cups cream
1/2 teaspoon salt
1/4 cup parmesan cheese, grated
1/2 cup fresh basil, chopped

PASTA WITH ANDOUILLE SAUSAGE, BEANS AND GREENS

Highly seasoned Andouille sausage makes this pasta extra-zippy, while white beans and collard greens give it a rustic flair. They are not ingredients typically used in pasta, but this dish may become part of your regular rotation once you try it. This one-dish dinner is perfect for cold, cozy nights when you want something hearty to stick to your bones, but it will satisfy any time. Swirling in lemon juice and olive oil just before serving adds freshness and ties all of the flavors together.

Pasta With Andouille Sausage, Beans and Greens image

Steps:

  • Bring a large pot of salted water to a boil. Add pasta and cook until al dente according to the package's instructions.
  • Meanwhile, heat oil in a large heavy-bottomed skillet over medium-high. Add sausage and cook, stirring occasionally, until browned, 5 to 7 minutes. Add shallot and garlic and cook, stirring often, until translucent, about 2 minutes.
  • Add collard greens and toss to wilt, 2 to 3 minutes. Season with salt and pepper. Add the thyme, cannellini beans and tomatoes and toss to warm through. Season again with salt and pepper to taste.
  • Reserve 1/2 cup pasta water and drain pasta. Return pasta to the empty pot and set over medium-low. Add the sausage mixture and toss to combine, gradually adding the reserved pasta water as needed to create a sauce.
  • Remove from the heat and sprinkle with parsley, chives, lemon zest and Parmesan. Season with salt and pepper to taste. Divide among bowls, drizzle with olive oil and serve with lemon wedges.

1 pound rigatoni or any pasta with ridges
2 tablespoons extra-virgin olive oil, plus more for drizzling

1/4 cup thinly sliced chives
1 lemon, zested and cut into wedges, for serving

  • Bring a large pot of salted water ( about 4 qt + 1 tbsp of salt) to a boil. Follow the instructions on the product packaging and cook pasta until al dente.
  • In a large deep saute pan, heat the oil over moderate heat. Cook the sausage (chasing removed), breaking up the meat for about 4 minutes.
  • Reduce the heat to moderately low. Add onion, and cook for about 4 minutes or until it translucent. Be sure to keep scraping up the browned bits from the bottom to prevent burning.Add garlic, and keep stirring for about 1 minute.
  • Add beer to the pan. Be sure to scrape up the browned bits from the bottom, simmer until reduced by half, for about 3 minutes.

  • Slice the brats into 1/2"-thick coins and place them in a heated skillet over medium heat. Cook until browned on both sides and cooked to an internal temperature of 145*F. Remove the brats coins from the skillet and keep on a plate inside your microwave to stay warm.
  • In the bottom of the heat skillet, add the butter and minced garlic. Once the butter is melted, add in the flour and stir until the flour absorbs all of the liquids, about 20-30 seconds. Then add in the milk, stirring occasionally, 1/2 cup at a time. Once the first 1/2 cup of milk starts to simmer, you can add the next 1/2 cup and so on, until all the milk has been added.
  • This is now a good time to cook your pasta according to package instructions so that the pasta is likely done at the same time as the sauce!
  • Once all the milk has been added to the skillet, stir in the paprika and cayenne pepper and allow to simmer for 5-10 minutes, until the cream sauce starts to thicken. Stir in the frozen peas and parmesan cheese and allow to simmer for another 1-2 minutes before adding the bratwurst coins and pasta back into the skillet with the sauce.
