- In a large saucepan combine cocoa and salt. Stir in sweetened condensed milk.
- Over medium heat, slowly stir in water and coffee; heat thoroughly but do not boil. Stir in rum extract. Serve immediately.

- In a large saucepan, combine the milk, rum, syrups and brown sugar. Cook over medium heat until hot (do not boil). Stir in coffee and liqueur., Meanwhile, in a small bowl, beat cream until it begins to thicken. Add confectioners' sugar; beat until stiff peaks form. Fold in liqueur until combined., Pour coffee mixture into mugs. Garnish with a dollop of coffee whipped cream and, if desired, espresso powder.

- Pour the coffee into a heatproof glass or mug. Stir in the liqueur, rum and sugar and mix until the sugar has dissolved.
- Put a handful of ice in a cocktail shaker and add the cream. Shake a few times, just until the outside of the shaker feels a little frosty, then slowly strain the cream on top of the liqueur coffee - use a bar spoon or pour over the back of a teaspoon to help you slow down the pour and ensure the cream floats.
