CHOCOLATE PUDDING
Steps:
- Put 1 1/2 cups of the milk, the sugar, and the cocoa in a nonreactive saucepan. Bring to a simmer, over medium-high heat. Remove from the heat.
- Meanwhile, whisk the remaining 1/2 cup of the milk, cornstarch, salt, egg yolks, and vanilla in a bowl. Gradually whisk the hot milk into the egg mixture. Return to the saucepan and cook over medium-high heat whisking constantly, until the pudding comes to a full boil. Reduce the heat to maintain a simmer, and continue whisking until thick, about 2 or 3 minutes more.
- Pour the pudding into 6 small cups. Cover with plastic wrap and refrigerate for at least 4 hours or ideally overnight until set.
- Just before serving pour the cream into a chilled bowl. Whip the cream with a whisk or a hand held mixer, and continue beating until soft peaks form. Take care not to over-beat the cream or it will be grainy. Serve each pudding with a dollop of whipped cream on top.

HOMEMADE CHOCOLATE PUDDING
This delightful pudding is always a treat and easy to whip up using common pantry ingredients. I usually top the pudding with M&M's. My husband likes whipped topping on his and our daughter loves to dip fresh strawberries in hers. -Carrina Cooper, McAlpin, Florida

BRAZILIAN STYLE(MILK PUDDING)

Steps:
- Place 1 to 2 inches of water in a roasting pan. Place the pan in the oven and preheat to 325°.
- Put the sugar in the ring mold. Place the mold directly over medium heat. Keep turning the mold until the sugar melts into a golden brown caramel and spoon it up the sides of the mold.
- Be careful not to burn the sugar and yourself.
- I use an oven mitt to hold the mold in my left hand and a large spoon for the sugar in my right hand.
- This way I can keep turning the mold and spooning the sugar. Let the mold cool.
- Combine the condensed milk, regular milk and eggs in a blender. Whip (I like to use the frappe button in my blender) until smooth.
- Pour this mixture into the mold and place it in the center of the roasting pan with water.
- Bake the pudim for about 1 hour. It will turn golden brown on top and start separating from the sides of the mold. Let it cool to room temperature and place in refrigerator, preferably overnight (at least 6 hours).
- Just before serving, run the tip of a knife around the inside of the mold. Place a deep platter over the mold and invert: the pudim should slide out easily.
- If not, give the mold a firm but careful shake. Spoon the caramel sauce on top and serve. Serves about 10. Totally yummy!

- Whisk the condensed milk and cocoa powder together until homogeneous (no lumps). Then, stir in the butter.
- Stovetop: Cook in a medium non-stick saucepan over medium heat (large burner), stirring constantly, until the mixture thickens and starts to peel away/show the bottom of the pan when you scrape it with your wood spoon (about 5-8 minutes).
- Microwave: Pour mixture into a deep microwaveable bowl. If 900 watts, let cook on full power for about 6 minutes -- removing and stirring at least every 2 minutes, or until thick enough to be rolled (when it cools down, mixture will be thicker).
- While it is cooking, do not leave the microwave unattended because mixture will rise and possibly bubble over, making a mess. Every time it rises, pause until mixture settles back down. If 1100 watts, cook at 80 % power. Double batches take more time to cook

- Brazilian Hot Chocolate. Let’s start things off with a Brazilian hot chocolate. It’s the best beverage to warm you up on a chilly day. Brazilian chocolate is just as rich and chocolatey as its American counterpart.
- Brigadeiros (Chocolate Truffles) Next up is the most popular Brazilian dessert there is: brigadeiros. These bite-sized balls are well known, for good reason.
- Brazilian Carrot Cake. Just like American carrot cake, the Brazilian version is moist, tender, and packed with flavor. The difference? Instead of a cream cheese frosting, it’s glazed with brigadeiro!
- Brazilian French Toast. Rabanada, or Brazilian French toast, is made with thick, round, stale bread flavored with custard and sprinkled with cinnamon sugar.
- Brazilian Rice Pudding. Arroz doce, or rice pudding, is another popular Brazilian dessert made from rice, sweetened condensed milk, coconut milk, heavy cream, sugar, and cinnamon.
