BREAKFAST BAGEL SANDWICHES (OAMC)

While searching for a great make ahead breakfast I tried this and it worked great! Hope you enjoy it too :)

Breakfast Bagel Sandwiches (Oamc) image

Steps:

  • Slice each bagel in half.
  • Lightly butter each side.
  • To cook eggs, lightly grease a mug or small bowl or ramekin; beat eggs in that bowl and microwave 30 seconds; remove egg in one piece and repeat for remaining eggs. Or take Swan Valley Tammi's idea and pre-cook the bacon, chop it up and add it to the eggs. Pour into greased muffin tins. Bake at 400 degrees Fahrenheit for 12 minutes so all 12 egg/bacon 'patties' are done at the same time.
  • On the bottom half of the bagel place cooked egg.
  • Top each egg with approximately 1 Tablespoon grated cheese.
  • Stack bacon on top.
  • Complete sandwich with top of bagel.
  • Cool slightly; wrap in plastic wrap individually; place in a large labeled zipper freezer bag.
  • To serve, remove 1 bagel sandwich from bag and remove wrapping.
  • Place upside down in microwave and heat for 30 seconds.
  • Place right side up and microwave for 30 seconds more or until heated through. **Time may vary in your microwave**.
  • Eat warm.

12 miniature bagels (whole wheat or white)
1/2 cup butter
12 pieces bacon (fried crisp and cut in half)
12 eggs
1 cup cheddar cheese, grated (or your favourite kind)

NIF'S BREAKFAST TO GO (SANDWICH) OAMC

I wanted to come up with something for my boys to grab for breakfast when they are rushing to get to the school bus. These turned out really well and froze perfectly. The best part? My kids like them! The instructions are incredibly easy - the first step is long because I give options on how to cook the eggs. Enjoy!

Steps:

  • There are a few different ways that you can cook the eggs. I pierced each yolk, gently stirred each of them and used a plastic egg cooker in the microwave. OR you can lightly scramble each egg in a cup sprayed with cooking spray. OR you can lightly scramble each egg in a silicon muffin tin and bake them. OR you can lightly scramble each egg and cook in a tiny frying pan (I've seen them!). It's up to you how to cook them! You basically want them to end up being cooked through and slightly smaller than the size of the English muffin.
  • While eggs are cooking, open each English muffin and lay them out.
  • When the eggs are done, place each egg on the bottom half of the muffin.
  • Add bacon to each muffin and top with cheese.
  • Wrap each breakfast sandwich in plastic wrap. I placed the sandwiches in a large resealable bag and put them in the freezer.
  • When cooking, placed wrapped sandwich in the microwave. Microwave on high for 30 to 45 seconds. Unwrap, turn over and cook on high for another 30 to 45 seconds.
  • The cooking time varies on how frozen the sandwich is (fridge freezer or deep freezer) and the microwave.

BREAKFAST SANDWICHES - OAMC

Other than the processed cheese slices, everything about these sandwiches is healthier than the store-bought kind. I tried using regular cheddar cheese instead of the processed slices, but it just wasn't the same, so processed cheese it is! I got lucky and happened to have a round cookie cutter that is the exact same size as my English muffins (3.5-inches) and a perfectly sized casserole dish (10.5x14-inches) for cooking my eggs in. I'm able to do three rows of four, and the only "extras" are the little diamond shapes between the circles, which I usually wrap up in a tortilla with ham and cheese for a bonus breakfast burrito for my fiance. The 'Zaar-calculated nutrition info does not match my calculations, which are: 350 calories, 11.6 g fat, 210 mg cholesterol, 1082 mg sodium, 32 g carbs, and 24.8 g fat.

Steps:

  • Preheat oven to 350 degrees.
  • Whisk together the eggs and stir in salt, pepper, onion, and bell pepper.
  • Pour into a casserole dish that has been sprayed with non-stick cooking spray.
  • Bake in preheated over for 15 minutes.
  • Stir.
  • Bake for 15 more minutes.
  • Remove from oven and let cool slightly.
  • Cut out 12 "egg circles" with a cookie cutter; place on bottom halves of the English muffins.
  • Top with ham, cheese, and top of English muffin.
  • Wrap sandwiches in foil, then freeze.
  • To serve, allow to defrost in the fridge overnight. Alternatively, you can defrost for a few minutes in the microwave.
  • Microwave on high for about a minute, or until heated through and cheese is melted.

Mc Donald's Spanish Omelet Breakfast Bagel Sandwiches image

Steps:

  • First prepare the sauce by combining the mayonnaise with the dill mustard in a small bowl. Set this aside until you are ready to use it.
  • To prepare the eggs it's best to make one at a time in a small 6-inch skillet. If you have more than one of these small pans, you can save a little time.
  • First preheat pan over low heat. Add 1/4 teaspoon of butter. Add 1/2 teaspoon of minced green pepper along with 1/2 teaspoon minced white onion to the pan and saute for a couple minutes, or until softened.
  • Beat an egg in a small bowl with a whisk until it is smooth, but not foamy. Add a pinch of salt and pepper to the egg.
  • Add the egg to the pan with the vegetables. Swirl the pan so that the egg spreads out.
  • As the egg begins to cook, use a spatula to pull in a couple of the edges so that raw egg flows around from the top onto the hot pan. Cook for 2 to 3 minutes, then fold over one of the edges of the egg using a spoon or fork. Fold it down about an inch. Fold the opposite end over as well. Then fold the remaining two edges over, creating a small rectangular or square mini-omelet.
  • Repeat with peppers, onions and one egg EACH until you have four square mini omelets.
  • Flip the little omelets over and turn off the heat.
  • Press the sausage into four 2-ounce patties approximately the size of the bagel. Cook the sausage in a large skillet over medium heat until brown. Drain when done.
  • Slice a bagel in half and place it with the faces up on a baking sheet. Grill the faces of the bagel halves in your oven set on broil until golden brown. You may also use a toaster oven for this step, but be sure to place the sliced bagel halves onto a small baking sheet or on aluminum foil.
  • When the bagels are toasted, spread about 1/2 tablespoon of the sauce onto the face of the top bagel half. Place a slice of American cheese onto the face of the top bagel half. Place a slice of Monterey Jack cheese over the face of the bottom bagel half. Place a sausage patty on the cheese on the bottom bagel half. Place the finished omelet onto the sausage on the bottom half of the sandwich.
  • Finish by flipping the top half of the sandwich over onto the bottom. Heat for 15 seconds in microwave if needed to warm.

I started experimenting with breakfast ideas for my husband who is too busy at work to sit down for long to eat. The seasonings, cheese, meat and bread I have listed are just suggestions (my husband's preference). Add veggies if you like! The possibilities are endless! If you want to cut down on the meat and save some money, replace part of the sausage with textured vegetable protein. It will take on the flavor of the sausage and make it a little lower in fat. Just follow the directions on the TVP package to prepare. TVP is usually in the health food section at the store.

Make Ahead Breakfast Sandwiches image

Steps:

  • Bake biscuits according to package directions.
  • While biscuits are baking start browning sausage.
  • In a mixing bowl combine eggs dry mustard and pepper.
  • Add egg mixture to the browned sausage and cook until eggs are done.
  • After biscuits have cooled cut them in half and spread with butter.
  • Sprinkle buttered biscuits with garlic salt (DON'T add the salt to the eggs while they are cooking, the salt will make the eggs rubbery).
  • Cut cheddar cheese slices into fourths.
  • Put one fourth of cheese slice on bottom half of biscuit.
  • Spoon a small amount of cooked egg and sausage mixture onto the bottom half of each biscuit (on top of cheese).
  • Place another fourth of a cheese slice on top of the egg and sausage mixture (putting the cheese on this way "glues" the sandwich together when it is reheated).
  • Place top of biscuit onto sandwich.
  • Wrap each sandwich in wax paper and put them in large freezer bags.
  • Place them in the freezer.
  • To reheat, leave sandwich in wax paper and microwave on high for approximately one minute to a minute and a half.
