STRAWBERRY YOGURT GRANOLA POPS

Stay cool on rushed mornings with these easy-to-fix yogurt pops. Just mix fruit, milk, yogurt and Cascadian Farm Oats & Honey Granola into a pop maker, freeze overnight and you'll have a perfect breakfast on the go.

Strawberry Yogurt Granola Pops image

Steps:

  • In medium bowl, beat yogurt and milk with whisk until well combined. (Mixture needs to be a pourable consistency.)
  • Cut each strawberry into slices. Apply strawberry slices to inside walls of 4 molds in quick-frozen ice pop maker (Zoku™). Insert pop sticks. Pour about 1 ounce (2 tablespoons) yogurt mixture into each mold. Freeze 3 to 4 minutes.
  • Add thin layer of granola to each mold. Pour yogurt mixture to "fill" line of each mold. Freeze completely. Follow manufacturer's instructions for removing pops.

Steps:

  • To make the coulis, juice the half lemon, then put in a pan with the raspberries and honey. Cook over a gentle heat for a few moments, breaking down with the back of a wooden spoon. Blend to a purée, then push through a sieve and discard the raspberry seeds. Divide between the bottom of four little pots or jars.
  • To make the quick granola, melt the coconut oil, cinnamon and pinch of salt in a medium pan over a gentle heat. Pour in the oats, seeds and honey and stir well to combine. Continue to move around the pan until evenly browned, about 5 mins. Spread out on a baking sheet to cool.
  • While it's cooking, slice up the strawberries and divide between the pots, layering up over the coulis. Spoon 1 tbsp of yogurt on top of each pot. Finish each pot with 1 tbsp of granola sprinkled over (the remaining granola will keep in a jar for a week).

  • Place a few berries in the bottom of each ice pop mold. Follow with a few spoonfuls of the yogurt mixture, filling the mold about halfway. Top with more berries, then more yogurt, stopping when the mold is 1/2 inch away from being full.
  • Place granola in a small bowl. Drizzle with 1 tbsp of honey and toss to coat. Spoon the coated granola into the top of each chilled ice pop mold, pressing down firmly.
