BROCCOLI CHEDDAR SQUARES
For many years, I've made these cheesy broccoli squares for tailgate parties, book club and other events. They're excellent served warm or hot, but we enjoy them cold, too. -Veronica Downen, Crystal Beach, Florida

Steps:
- Preheat oven to 350°. In a large bowl, whisk flour, salt and baking powder. In a small bowl, whisk eggs and milk until blended. Add to flour mixture; stir until moistened. Fold in cheese and broccoli., Place butter in a 13x9-in. baking dish; place dish in oven 3-5 minutes or until butter is melted. Carefully tilt baking dish to coat bottom and sides with butter. Add broccoli mixture., Bake, uncovered, 35-40 minutes or until edges are golden brown. Let stand 20 minutes before cutting.

Steps:
- Grease a 9x13 baking pan with the butter.
- Steam broccoli until partially cooked, about three minutes.
- Cool and press dry.
- Beat eggs and milk until frothy.
- Thoroughly mix dry ingredients.
- Stir into egg mixture.
- Fold in broccoli, cheese and onion.
- Spoon into baking dish, spreading evenly.
- Sprinkle with seasoned salt.
- Bake at 350 for 35 minutes.
- Cool 5 minutes and cut into squares.
BROCCOLI & CHEDDAR BARS
These bars are so good. It's another well received dish the folks at Church enjoyed..so easy too! I used mushrooms today, you can leave them out if you prefer...sometimes I add some heat to them by adding red pepper flakes... These can be eaten cold as well as hot, that's what makes them nice to take somewhere. Enjoy!

- 1. Preheat oven to 350 degree F. In a 9 x 13 baking dish, place butter and place in oven to melt.
- 2. In a large bowl, thoroughly mix all other ingredients together.
- 3. Spread into pan evenly.
- 4. Bake for 30 - 35 minutes. Leave cool for a few minutes before cutting.
BROCCOLI-CHEESE CRESCENT SQUARES
These are so yummy, and easy to make too, a favorite in my house for a long time, they make a great snack or a main meal, served with a side salad. If desired the recipe may be doubled without any problem, it's a good idea to prepare a double batch of these, cause they won't last long!

Steps:
- Heat oven to 350 degrees.
- Lightly grease a cookie sheet.
- Cook the rice in 1/2 cup water as directed on the package.
- In a medium bowl, combine the cooked rice, broccoli in cheese sauce, 1/4 cup grated Parmesan cheese, salt, pepper and pepper; mix well.
- Separate the dough into 4 rectangles.
- Firmly press perforations to seal.
- Press each to form a 6x3-inch rectangle.
- Mound generous 1/3 cup of broccoli mixture evenly onto one end of each dough rectangle.
- Fold and strech dough over the filling; press the edges to seal well (squares will be very full).
- With a fork, crimp the edges.
- Place on a cookie sheet.
- Brush with melted butter, sprinkle with 2 Tbsp of Parmesan cheese.
- Bake for 19-24 minutes, or until golden brown.
- ***NOTE***to quickly thaw frozen broccoli package, cut small slit in the center pouch; microwave on HIGH for 2-3 minutes, or until thawed.
BROCCOLI BISCUIT SQUARES
Steps:
- In a large skillet, cook the beef, mushrooms and onion over medium heat until meat is no longer pink; drain. In a large bowl, combine biscuit mix, 1/2 cup cheddar cheese, Parmesan cheese and water until a soft dough forms. , Press dough onto the bottom and 1/2 in. up the sides of a greased 13x9-in. baking dish. Stir remaining cheddar cheese into the beef mixture; spread over dough. Sprinkle with broccoli. , In a large bowl, beat eggs, milk, salt and pepper. Pour over meat mixture. Bake, uncovered, at 400° for 25 minutes or until a knife inserted in the center comes out clean.

CHICKEN BROCCOLI CRESCENT SQUARES
This is my own creation of a recipe from a local restaurant that closed. This was my favorite along with their Robert Redford Pie. That's a recreation waiting to happen too! You may choose to used canned chicken to have even less prep or make triangles,instead of squares, for appetizers. Great with a salad to complete a light meal.

Steps:
- Blend cream cheese with butter.
- Add chicken, salt, pepper, milk, and onion.
- Spoon 1/2 cup meat mixture onto 2 unseparated "triangles" of dough - this should be a square.
- Sprinkle top liberally with cooked broccoli.
- Pull 4 corners to the top center of the mixture and twist slightly to seal edges by pinching.
- Brush tops with remaining butter.
- Bake on ungreased cookie sheet for 20-25 minutes in 350 degrees oven until golden brown.

Steps:
- 1. Put broccoli in a mixing bowl. Add cheese/ Set aside. Mix egg and milk. Combine the flour and seasonings with the the egg and milk mixture.
- 2. Spray a casserole dish with cooking oil spray add the broccoli mixture which has been mixed with the the egg and milk mixture into the casserole. Sprinkle with parmesan cheese. Sprinkle parmesan cheese over all.
- 3. Bake in a preheated oven at 375' for about 40 minutes until golden brown. Cut into squares for serving. Enjoy !!
