This makes a comforting one-dish meal that my family loves. I love using rotisserie chicken for this.

Chicken, Broccoli and Noodles Supreme image

Steps:

  • Cook the noodles according to package directions.
  • Add the broccoli for the last 5 minutes of cooking time.
  • Drain the noodle mixture well and return to saucepan.
  • Stir the chicken, soup, sour cream, cheese and black pepper in the saucepan and cook over medium heat until the mixture is hot and bubbling, stirring often.

3 cups cooked chicken, chopped
3 cups uncooked medium egg noodles
2 cups fresh broccoli or 2 cups frozen broccoli florets
1 (10 3/4 ounce) can condensed cream of chicken soup
1/2 cup sour cream
1/3 cup parmesan cheese, grated
1/8 teaspoon ground black pepper

FRENCH CHICKEN BROCOLLI SUPREME image

Steps:

  • 1. In greased 13×9 pan, layer the broccoli and chicken, then set aside
  • 2. In saucepan over medium heat, combine the melted butter, cornstarch dissolved in water, chicken broth, seasonings, and milk. Stir well, and continue stirring until sauce has thickened.
  • 3. Turn heat down to low, and add 1- 1/2 cups grated cheddar cheese. Stir until melted. Pour over the chicken and broccoli. Top with 1- 1/2 cups grated cheddar cheese.
  • 4. Melt the butter, and add the poppy seeds, and stir well. Crush Ritz crackers in large zip-lock bag with a rolling pin. Don't crush too small. Add crumbs to the melted butter.
  • 5. Sprinkle crumbs over the top of the grated cheese.
  • 6. Bake uncovered at 350 degrees for about 30 minutes, or until hot & bubbly.

1 lb fresh broccoli break in pieces, and steam for 2 minutes.

3 c grated cheddar cheese divided
2 pkg ritz crackers (sleeves)
1 stick melted butter
1 Tbsp poppy seeds (optional)
sauce
1/3 c butter- melted
1/4 c cornstarch, dissolved in 1/2 cup cold water
1/3 c cup chicken broth
1/4 tsp salt
1/4 tsp pepper
2 c milk
1 1/2 c of the above cheddar cheese

Got this recipe from my cousin (CrystalB -- chef #139350), who got it from a Company's Coming cookbook. A perfect side-dish for an Oriental meal -- mildly flavoured, slightly sweet.... just a great way to serve broccoli!!

Steps:

  • Stir together first 6 ingredients and set aside.
  • Heat cooking oil in wok or frying pan on medium-high. Add broccoli and garlic and stir-fry 3-4 minutes or until broccoli is tender-crisp.
  • Stir cornstarch mixture and add to broccoli mixture until boiling and thickened.

Steps:

  • Flatten chicken breasts to 1/4-inch thickness.
  • Sprinkle with salt and pepper.
  • Heat 1 tablespoon each oil and butter in a large nonstick skillet to high. Cook chicken 4 minutes per side or until done (internal temp 170°F). Remove chicken to serving platter; keep warm.
  • Add green onions, lemon juice, parsley and mustard to skillet; cook and stir 15 seconds.
  • Add chicken broth and stir until smooth.
  • Remove from heat and stir in remaining butter.
  • To serve,I like to coat my chicken in the sauce or you can ladle some over each breast.

4 boneless skinless chicken breasts
1/2 teaspoon salt
1/4 cup chicken broth

Steps:

  • 1. Place the broccoli in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil, cover and steam for 5-7 minutes or until crisp-tender. Meanwhile, in a large skillet, saute the mushrooms in the butter until tender.
  • 2. In a greased 13x9x2 in. baking dish, layer 4 cups chicken, two-thirds of the mushrooms, two cans of water chestnuts and 4 cups broccoli. In a greased 8 in. square baking dish. layer the remaining chicken, mushrooms, water chestnuts and broccoli.
  • 3. In a large saucepan over medium heat, melt butter. Stir in flour, seasoned salt and pepper until smooth. Gradually add the broth and whipping cream. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Remove from the heat.
  • 4. Stir in a small amount of the hot mixture to egg yolks. Return all to pan, cook and stir until mixture reaches 160 degrees and coats the back of a metal spoon. Remove from heat, stir in lemon juice and nutmeg.
  • 5. Pour 3 cups of sauce over the large casserole and remaining sauce over the small casserole; sprinkle with almonds. Bake, uncovered, at 375 degrees for 20-25 minutes or until bubbly and heated through.

Steps:

  • 1. In mixing bowl, combine egg, broccoli, cream style corn, onion, salt & pepper.
  • 2. In small sauce pan, melt butter then add herb seasoned stuffing mix. Add 3/4 cup of it to broccoli mixture. Put into ungreased 1 qt. casserole dish.
  • 3. Sprinkle with remaining 1/4 cup stuffing mix. Bake uncovered at 350 for 35 to 40 mins.

Broccoli and Chicken Stir-Fry image

Steps:

  • Stir soy sauce, brown sugar, ginger, and red pepper flakes together in a bowl to dissolve sugar into the liquid. Mix water and cornstarch together in a small bowl; stir with a whisk until cornstarch dissolves completely.
  • Heat oil in a large skillet over high heat. Fry chicken and onion in hot oil until the chicken is no longer pink in the center and the onion is tender, 5 to 7 minutes. Stir broccoli with the chicken and onion; saute until the broccoli is hot, about 5 minutes. Push the chicken and vegetables mixture to the side of the skillet.
  • Pour the soy sauce mixture into the vacant part of the skillet. Stir the cornstarch slurry into the soy sauce mixture until the color is consistent. Move the chicken and vegetables back into the center to the pan; saute until the sauce thickens and coats the chicken and vegetables, about 5 minutes more.
