BROCCOLI WITH ORANGE SAUCE
If you like oranges, you'll enjoy this citrusy sauce I adopted when looking for more interesting way to serve broccoli. It's also nice as a dipping sauce for pork chops and chicken. -Estelle Hardin of Kanab, Utah

Steps:
- Place broccoli and a small amount of water in a saucepan; bring to a boil. Reduce heat; cover and cook for 5-8 minutes or until crisp-tender. Meanwhile, in a small saucepan, combine the sugar, cornstarch and bouillon. Stir in water, orange juice and zest until blended. Bring to a boil; cook and stir for 2 minutes until thickened., Drain broccoli and place in a serving bowl. Garnish with orange slices and drizzle with sauce.

Steps:
- Cut the broccoli into florets, discarding stems or reserving for another use.
- Combine the florets with butter, soy sauce and 1/4 inch water in a skillet large enough to hold the florets in a single layer.
- Bring to a boil.
- Reduce heat and simmer 3 minutes.
- Remove cover and simmer until most of the liquid has evaporated, 1 -3 minutes longer.
- Add salt and pepper to taste.
- Stir florets to coat with sauce and serve.

- Place 1 in. of water in a saucepan; add broccoli. Bring to a boil. Reduce heat; cover and simmer for 5-8 minutes or until crisp-tender. Drain and keep warm., In the same pan, combine the butter, orange juice, orange zest and salt; heat until butter is melted. Return the broccoli to the saucepan; toss to coat. Transfer to a serving bowl; sprinkle with almonds.

- Cut the broccoli into 2-inch florets, leaving one to two inches of stems attached. Discard the remaining thick stalks. In a large bowl, combine the melted butter, garlic, chipotle chili peppers, honey and salt and mix well. Add the broccoli and toss to coat evenly. Transfer the broccoli to the prepared baking sheet.
- Roast for about 12 minutes, until the broccoli is crisp-tender and lightly browned in spots. Sprinkle lime juice over top (go easy; a little goes a long way). Taste and adjust seasoning if necessary. Transfer the broccoli to a serving dish. Use a rubber spatula to scrape the bits of garlic and chipotle chili peppers off the foil and onto the broccoli. Serve hot.
