VERACRUZ-STYLE RED SNAPPER
I like red snapper for this, but any white, flaky fish will work. By the way, many Veracruz-style fish recipes call for pickled jalapenos, but I think there's plenty of acidity in this from the lime and tomatoes, so I like the fresh pepper a little more.

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- Heat olive oil in a skillet over medium heat. Stir in onion; cook and stir until onions begin to turn translucent, 6 to 7 minutes.
- Cook and stir in garlic until fragrant, about 30 seconds. Add capers and caper juice; stir to combine.
- Stir in tomatoes, olives, jalapeno pepper, . Cook and stir until jalapeno pepper softens and tomatoes begin to collapse, about 3 minutes. Remove from heat; stir in oregano.
- Drizzle 1 teaspoon olive oil into a small baking dish. Sprinkle in 1 tablespoon of the tomato-olive mixture. Top with 1 snapper fillet, salt, black pepper, and cayenne pepper. Top with more filling and juice from 1 lime. Repeat with remaining snapper fillet, seasoning, and lime juice in a second baking dish.
- Bake in the preheated oven until fish is flaky and no longer translucent, 15 to 20 minutes.

BAKED RED SNAPPER WITH GARLIC, LIME, AND CILANTRO
Steps:
- Spray a baking dish with cooking spray. Place red snapper skin-side down in the baking dish. Sprinkle evenly with garlic, garlic salt, and red pepper. Spread cilantro evenly over the fish; squeeze lime evenly on top.
- Marinate in the refrigerator, 30 minutes to 1 hour.
- Preheat the oven to 425 degrees F (220 degrees C). Melt butter and pour evenly over the fish.
- Bake in the preheated oven until flesh flakes easily with a fork, 15 to 18 minutes. Serve with juices spooned over the fish, if desired.

PANFRIED RED SNAPPER WITH CHIPOTLE BUTTER
Steps:
- Mash together butter, chipotles to taste, adobo sauce, and salt with a fork until blended.
- Pat fish dry and cut each fillet in half crosswise, then season with salt and pepper. Spread flour on a plate and dredge fish, knocking off excess.
- Heat 1 1/2 tablespoons oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then panfry fish, skin sides up first, in batches, turning over once, until browned and just cooked through, 4 to 6 minutes. Transfer as cooked with a slotted spatula to plates and add more oil to skillet as needed. Top fish with dollops of chipotle butter.
BBQ BROILED RED SNAPPER
If you don't cook fish often, or don't like fish, this broiled red snapper recipe may be just what the doctor ordered. Normally we don't want to cover up the delicate flavors of the seafood, but in this case, we have no choice. It's not like you can't tell you're eating fish, but close enough.

- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil and lightly coat with cooking spray.
- Combine mayonnaise, lemon juice, and barbeque sauce in a bowl.
- Place red snapper fillets on the prepared baking sheet and season with salt. Spread the mayonnaise mixture over the top of each fillet and sprinkle with cayenne pepper.
- Cook under the preheated broil until top is browned and bubbling and fish flakes easily with a fork, rotating the baking sheet if necessary, about 7 minutes.

BRAISED RED SNAPPER WITH GRANDMA-STYLE ZUCCHINI, PEPPERS, AND BLACK OLIVES
"Grandma-style" means the vegetables are cooked like a stew in a big pot until they're soft and delicious. The vegetables taste better and better as you cook them down, and the broth tastes nourishing. This is one of the classic recipes I pull out in a pinch, and it's always welcomed.

- Preheat the broiler. Pull out the cores of the red peppers; then halve them lengthwise and remove the ribs and seeds. Toss the peppers with a little olive oil, salt, and pepper. Place them on a cookie sheet, skin side up, and broil for 10 minutes, until really charred and blistered. Put the peppers into a bowl, cover with plastic wrap, and steam for about 10 minutes to loosen the skins. Peel the peppers and cut them into big strips.
- Heat a 2-count of oil in a wide pot. Add the roasted peppers, potatoes, zucchini, olives, garlic, thyme, tarragon, and lemon slices. Sauté everything together for a few minutes over medium heat to coat in the oil and soften; season with salt and pepper. Add the chicken stock, wine, and lemon juice. Bring to a boil, then reduce the heat, and let it slowly simmer down for 30 minutes while you prepare the fish.
- Rub a little olive oil and salt and pepper on the fish fillets. Add a 2-count drizzle of olive oil to a skillet and place over medium heat. When the pan is nice and hot, sear the fish, skin side down. Gently press on the fish with a spatula to crisp up the skin. Carefully transfer the fish to the pot of vegetables, skin side up. Turn the heat down to low, cover, and simmer for 5 minutes. Keep an eye on it; don't let the liquid boil or cook the fish too long or it will fall apart. Serve the fish and vegetables in wide, shallow bowls with a ladle of broth and a drizzle of olive oil. Home-style goodness!
RED SNAPPER WITH CILANTRO, GARLIC, AND LIME
Steps:
- Preheat broiler and lightly oil a shallow baking pan (1 inch deep).
- Pat fish dry, then arrange, skin sides up, in 1 layer in baking pan. Brush both sides of fish with 3 tablespoons oil total and sprinkle with salt and pepper. Toss together cilantro, garlic, and zest in a small bowl.
- Broil fish 6 inches from heat, without turning over, until just cooked through, 8 to 10 minutes. Transfer fish, skin sides up, with a metal spatula to a platter, then sprinkle with cilantro mixture and drizzle with remaining 3 tablespoons oil.

CHIPOTLE LIME RED SNAPPER - OVER THE FIRE COOKING

- Start by filleting your red snapper. Make an incision along the top spine and down behind the gill to the bottom of the collar. Next, slice down one side of the spine all the way down to the tail. Finally, slice from your cut at the collar to the tail on the bottom side of the fish. Next, holding the meat from the top of the spine, begin to slowly slice following the rib bones until the filet is free from the fish. Repeat this on the other side as well until you have two red snapper filets.
- In a blender, I added all the ingredients for the Chipotle Lime marinade. Adding the filets to a food safe bowl, I poured in the marinade and let it sit in the fridge for 15-20 minutes.
- Preheating a fire for direct grilling at high heat (around 400F), I added a skillet/plancha with some oil to preheat about 1-2 minutes before cooking.
- Pull out the snapper and discard the excess marinade, I added them to the skillet flesh side down first to cook for 1-2 minutes. Flipping it over, I cooked the skin side down for 1-2 minutes until it was 145F internal. Once done, I pulled it off to rest for 2 minutes.
