ITALIAN GRILLED CHEESE SANDWICHES

I came up with this recipe for my niece. I combined grilled cheese sandwiches with garlic bread. Its tasty, its quick and its the perfect appetizer for friends, family and unexpected guests. Use a firm white bread for best results.

Italian Grilled Cheese Sandwiches image

Steps:

  • Preheat your oven's broiler.
  • Place 6 slices of bread onto a baking sheet. Spread a small handful of the mozzarella cheese over each slice. Top with the remaining 6 slices of bread. Mix together the butter and garlic powder, brush some over the tops of the sandwiches, or spread with the back of a tablespoon. Sprinkle with dried oregano.
  • Place baking sheet under the broiler for 2 to 3 minutes, until golden brown. Remove pan from oven, flip sandwiches, and brush the other sides with butter, and sprinkle with oregano. Return to the broiler, and cook until golden, about 2 minutes.
  • Cut sandwiches in half diagonally, and serve immediately with vodka sauce on the side for dipping.

Steps:

  • In a small saucepan, bring vinegar to a boil; cook until liquid is reduced to 3 tablespoons, 8-10 minutes. Remove from heat. Meanwhile, combine tomatoes, shallot, basil, 2 teaspoons olive oil and garlic. Cover and refrigerate until serving., Brush remaining oil over both sides of baguette slices. Grill, uncovered, over medium heat until golden brown on both sides., Top toasts with tomato mixture. Drizzle with balsamic syrup; sprinkle with sea salt and Parmesan. Serve immediately.

  • Once you've diced your tomato, use paper towels to press down whilst on the chopping board, just to soak up some moisture. Place into a mixing bowl with red onion, basil, 1/2 tbsp extra virgin olive oil and a good pinch of salt and pepper.
  • Brush one side of all of the slices of ciabatta with extra virgin olive oil. Flip half of them over so they're oil-side-down. Place mozzarella on top, then top with the bruschetta mix, then finish parmesan. Place the oil slice on top (oil-side-up) and gently push down to secure the filling.
  • Add to a griddle or frying pan over medium heat (medium high if you want some char, the cheese just may not be as melted). Once golden and lightly charred on one side, flip over and gently rub the top with a clove of garlic. Fry the other side then place garlic-side-down on a serving board. Rub the top with garlic.
  • Depending on pan size, you will need to do this in two batches. Serve by drizzling individual sandwiches with balsamic glaze!
