- In a small skillet, saute onion in oil for 3 minutes. Add garlic; cook 1 minute longer. Set aside. , In a large bowl, combine the ricotta, 1/2 cup mozzarella cheese, cream cheese, 4 tablespoons Parmesan cheese, Italian seasoning and pepper; beat until smooth. Stir in onion mixture and spinach. Stuff into the manicotti shells., Pour half of the spaghetti sauce into a greased 13x9-in. baking dish. Arrange shells over sauce; top with remaining sauce., Cover and bake at 350° for 25 minutes. Uncover; sprinkle with remaining mozzarella and Parmesan cheeses. Bake 5-10 minutes longer or until cheese is melted.

3 CHEESE MANICOTTI
Years ago my grandmother ordered me these recipe cards in the mail that you file in a box that the company provides. I didn't much care for the recipes so we ended the subscription. There was one gem in the bunch, though. It remains a family favorite! (I don't remember the name of the company) I have adjusted the cooking times several times based on different ovens (military, moving, rental houses, unreliable ovens!) so you may need to watch it and cook it more or less based on your oven. It is not a very traditional recipe but it is quick with little mess! You can also make it ahead and just cook it when you are ready.

Steps:
- Cook shells according to the package directions.
- Rinse well in cool water and dry.
- While the pasta is cooking, mix together the cream cheese and 3 cups of Mozzeralla cheese.
- Stuff shells with cream cheese mixture (I use my hands to roll a"snake" of mix and slide it right in the manicotti tube.) Put a thin layer of sauce on the bottom of a 13 by 9 baking dish.
- Place manicotti in dish and cover with remaining sauce.
- Sprinkle 1 cup of Mozzarella over the top.
- Cover with foil and bake for 30 minutes at 375.
- Uncover, sprinkle with parmesan cheese, and bake for 15 minutes more.

This recipe has been a Thomas family favorite for about 10 years. Despite her trepidation at cooking with ricotta cheese for the first time (which she had disliked as a child), Brynn instantly fell in love with this comforting blend of flavors and textures. It's been her go-to meal ever since, remaining a constant in their family as it's grown, and even standing up to the discriminating tastes of their 5-yr-old. She loves that it's always the right dish for any occasion, and is a hit with kids and adults alike!

Steps:
- Thaw Spinach.
- Preheat oven to 350° F.
- Grease a 13X9 baking dish; set aside.
- Cook manicotti according to package directions, drain & set aside.
- Cook meat & mix it in with marinara sauce; set aside.
- Grate mozzarella cheese (if not pre-shredded).
- In large bowl mix ricotta, 2 cups mozzarella, ½ cup parmesan, egg, prepared spinach,salt & pepper.
- Carefully split a manicotti shell open.
- Shape a ball of cheese mixture to fit the shell; close shell and lay seam-side down into prepared baking dish. Repeat procedure with remaining shells & cheese mixture.
- Pour meat sauce over shells and top with remaining mozzarella cheese.
- Bake uncovered for 30 minutes or until bubbly.
