BUFFALO SAUCE
Nutty browned butter adds a wonderful underlying note to this otherwise straightforward Buffalo sauce. The emulsion of hot sauce and that melted butter is key to this condiment's velvety texture, so be sure to whisk well. A cayenne-based bottled sauce like Frank's RedHot works best here, especially when balanced by brown sugar and vinegar. But be warned: You may have trouble stopping yourself from licking the whisk.

- In a small saucepan over medium heat, melt the butter. Continue cooking, gently simmering the butter and stirring the pan occasionally with a wooden spoon, until the milk solids at the bottom of the pan start to brown, 3 to 5 minutes. It should smell nutty and almost like caramel or butterscotch.
- Remove from the heat and carefully transfer the very hot browned butter to a large, heatproof mixing bowl. Add the garlic, stirring until the garlic is fragrant, a few seconds. Add the hot sauce, brown sugar and vinegar. Season with salt and pepper. Whisk vigorously until emulsified. Taste and add more salt, pepper and brown sugar as desired.
- Use immediately or refrigerate in an airtight container for up to 1 week. This is an excellent dipping sauce for French fries, roasted cauliflower and any kind of chicken (grilled, roasted or fried), or slathered between two slices of toasted bread in a deli sandwich.
GRILLED BUFFALO RIBS WITH PINEAPPLE-MOONSHINE BBQ SAUCE
Steps:
- Preheat oven to 350 degrees F and grill to medium-high.
- In a large saucepan, saute the onion, garlic, and horseradish over medium-high heat. Add the vodka and scrape the bottom of the pan with your wooden spoon or rubber spatula to deglaze the yummy bits off the bottom. Add the pineapple and tomatoes and bring to a simmer. Let it simmer for 10 minutes. Add the molasses, vinegar, honey, sugar, mustard powder, oregano, bay leaves, Worcestershire sauce, and ketchup. Allow it to simmer for 2 hours.
- Season the ribs with salt and freshly ground black pepper and rub with a little olive oil. Grill the ribs for about 5 minutes per side. In a braising pan, place the ribs and 1/2 of the sauce over the ribs and cover the pan with a lid. Save the other 1/2 of the sauce for the final plating. Add 1 cup of water to the ribs and let it simmer for 3 1/2 to 4 hours, until the meat is tender but is still on the bone. Remove the ribs from the liquid.
- Serving Suggestions: Place 2 ribs on each plate. Generously ladle the hot BBQ sauce over the ribs and top with grilled pineapple and sliced limes.
LOULOU'S BUFFALO RIBS

- For the marinade: In a large bowl, mix 1 cup water, the liquid smoke, beer, chile flakes, sea salt, Italian seasoning, pepper and bay leaves. Place the ribs in a hotel pan and pour the marinade over. Marinate the ribs overnight.
- Preheat the oven to 325 degrees F. Bake the ribs in the oven, semi-slow and low, for 3 1/2 to 4 hours.
- Pull out the ribs, and rest them for 1 hour, reserving any liquids at the bottom of the pan.
- For the sauce: In a large bowl mix the au jus from the baked ribs, the ketchup, honey, cayenne, horseradish, sugar, smoke and some salt and pepper.
- Preheat the grill to 350 degrees F. To serve, grill to char the ribs, 5 to 8 minutes. Add on some of the barbecue sauce, and serve.
BUFFALO SAUCE

- Put all the ingredients together in a pan and warm over a low heat, so that the butter melts and the garlic cooks gently. The sauce will need to simmer for around 3-5 mins, until it is fully heated through and the garlic is tender and fragrant. Taste and adjust the seasoning if needed. Serve warm as a dip or drizzle over chicken wings. Any leftover sauce will keep for up to five days in the fridge.

BUFFALO BBQ SAUCE
This is a Spicy, bold and thick BBQ sauce, especially good on chicken and pork. I've been making this sauce for years and it is my favorite bbq sauce to this day. When we fire up the grill this sauce is usually not far behind. Enjoy :)

Steps:
- In a medium saucepan combine all ingredients except tomatoe paste and bring to a boil.
- Turn heat down to low and simmer for 20 minutes stirring occasionally.
- Stir in tomatoe paste until well blended and simmer a couple more minutes. Use as you would any bbq sauce.
