TANTALIZING TATER TOTS #5FIX

5-Ingredient Fix Contest Entry. The PERFECT side dish or snack! Delicious bites of cheese, potatoes and crunch. You can vary your tots and go Italian, Greek or Mexican by modifying the cheese. These are a staple in our home.

Steps:

  • Line baking sheet or large plate with wax paper.
  • Pour panko crumbs Into medium bowl.
  • In a large bowl combine mashed potatoes, flour and cheese. Spoon a dollop of mixture into panko crumbs. Coat completely while simultaneously shaping into tater tot shape ( or leave as a ball). If you find dough too sticky to manipulate add a bit more flour. Place tot on wax paper and repeat with remaining potato dough.
  • Heat skillet to medium/medium high heat and add about an inch of oil. Once oil is hot add tater tots. They will turn golden brown on one side ( after a couple minutes) and then flip. Do NOT over crowd! Work in batches and make sure to keep an eye on them so they don't burn. Serve with your favorite condiment.
  • You can make tot shapes a day ahead and keep in refrigerator covered with plastic wrap.

2 1/2-3 cups breadcrumbs (Panko crumbs preferably)
vegetable oil or canola oil

Steps:

  • Brown the hash browns in a large skillet on med-med high heat. When they are cooked through and crisp top with entire 8oz bag of cheese covering potatoes entirely. Cover and let melt. pour can of chili over the top of this and heat thoroughly. Turn heat off and sprinkle onion over the top of the chili. Using a teaspoon cover the dish with dollops of sour cream.

  • Cook chicken by boiling, grilling, or use a roaster chicken an shred chicken once cooked. Mix chicken with hot sauce. Layer casserole dish with cream cheese (spread with spoon). Next layer the chicken and hot sauce on top of cream cheese. Next add the bag of shredded potatoes. At this point you can drizzle ranch or blue cheese dressing if you like or add it once the dish is cooked if you like - again this is optional not all people like the dressing. On top of that layer the cheddar cheese. Cook in 350 degree oven for 60 minutes.

Simply-Fied Kickin' Chicken Buffalo Tenders #5FIX image

Steps:

  • Trim chicken breasts of any fat and cut each into 3 strips cutting lengthwise. Place into ziploc baggie and add hot sauce. Seal it tightly closed removing air, squish it around to coat all and place into fridge to marinate for several hours, overnight, or just simply use now.
  • Preheat oven to 375 degrees. Place potatoes into shallow bowl. Line baking sheet with parchment paper. With tongs or by hand, remove strips letting any excess hot sauce drip away, one at a time, roll into potatoes to coat, and place onto prepared baking sheet. When all are nicely coated, patting on to coat well, pop into oven and bake until done, about 20-25 minutes depending on how thick your chicken strips are. Remove from oven, top with crumbled bacon and blue cheese and bake 1-3 minutes longer until blue cheese is just starting to melt.
  • Can be served with extra hot sauce, celery sticks, and Ranch or Blue Cheese Salad Dressing for dipping if desired.

  • Preheat oven to 400°F.
  • Spray a 9x9 or 8x8 inch baking dish with cooking spray.
  • In a small bowl combine chicken chunks & buffalo sauce, set aside.
  • In large bowl combine potatoes, dressing, and 1-1/2 cups cheese.
  • Spread half of potato mix in baking dish, spread chicken chunks over potatoes, cover with remaining potato mix.
  • Top with remaining 1/2 cup of cheese.
  • Cover with foil.
  • Bake in 400F oven, 25 minutes.
  • Remove foil bake another 20-25 minutes.
