QUICK & EASY MEMPHIS-STYLE BBQ RIBS

- Preheat oven to 350°. In a small bowl, mix the first 6 ingredients; rub 3/4 cup over ribs. Wrap rib racks in large pieces of heavy-duty foil; seal tightly. Place in a 15x10x1-in. baking pan. Bake 1-1/2 hours. Reduce oven setting to 250°. Bake until tender, 1-1/2 hours longer., Carefully remove ribs from foil; return to baking pan. Sprinkle ribs with remaining spice mixture. Bake 30 minutes longer or until lightly browned, brushing with barbecue sauce, if desired.

- Place each rack of ribs on separate large sheet heavy-duty foil; rub with coffee grounds. Wrap ribs in foil. Refrigerate 1 hour.
- Heat charcoal grill to medium heat. Arrange coals evenly on each side of charcoal grate. Place wrapped ribs on center of grate; cover with lid. Grill 2 hours.
- Remove ribs from foil; discard foil. Place ribs, meat-sides down, on grill grate; brush with 1/4 cup sauce. Grill 10 min., turning after 5 min. and brushing with remaining barbecue sauce.

- Place ribs on large sheet of heavy-duty foil sprayed with cooking spray. Mix sugar and bourbon until blended; spread onto ribs. Wrap in foil. Refrigerate 1 hour.
- Heat grill for indirect grilling: Light one side of grill, leaving other side unlit. Close lid; heat grill to 350ºF. Place ribs on grate over unlit area; cover. Grill 2 hours, monitoring for consistent grill temperature.
- Unwrap ribs; place, meat sides down, on grate over lit area of grill. Brush with 1/4 cup barbecue sauce. Grill 10 min., turning after 5 min. and brushing with remaining barbecue sauce.

I was watching a show on TV about a BBQ contest and the "Hogaholics" were a group that won with their ribs. I went online and found the recipe and everyone at my house loves it.

Steps:
- Dryrub: Mix together.
- Basting Sauce: Combine first four ingredients in a saucepan and mix well. Cook very slowly for 1 hour. Add sugar, butter, and root beer to mixture and slow boil for 30 minutes. Recommended for pork and game.
- Wet Sauce: Mix all ingredients in a saucepan and simmer for 1 hour. Let sauce stand for 2 hours before serving on the side with barbecue.
- Rub Dry Rub into both sides of skinned ribs. Place meat on grill away from coals, bone side down. Cook ribs 1-1/2 to 2 hours, never turning, before using basting sauce. Cook slowly for 3-1/2 to 4-1/2 hours, basting every 45 minutes to hour. Serve with Wet sauce on the side, or (not recommended by purists) baste with Wet sauce the last 1/2 hour.
- NOTES: I have never cooked them for the 4 hours it calls for. I usually use the indirect grilling method on my gas grill and keep them on fairly low heat for an hour and a half.

- Preheat your smoker. These ribs are smoked at a higher temperature of 275 degrees F using Hickory wood.
- Prepare your ribs. Remove the papery membrane on the back of your ribs and trim off any loose pieces of ribs or thick pieces of fat. Using 3 Tablespoons of your Memphis Style Dry Rub, season your ribs liberally on both sides and press the seasoning in with your hands (don't actually rub it).
- Smoke your ribs. Get your ribs on the smoker (bone side down) and close the lid. Don't peek or lift the lid at all for the first hour.
- Begin spritzing. Combine the apple cider vinegar and apple juice in a spritzing bottle. Spritz the ribs every 30 minutes after the first hour.
