SWEET AND BUTTERY LOAF
This buttery vanilla-scented bread loaf makes an excellent addition to any brunch-or turn it into French toast for double the luxury.

Steps:
- Place the yeast, water and 1 tablespoon of the flour in a small bowl. Mix to combine and set aside.
- Place the chopped butter and sugar in the bowl of an electric mixer and beat on low speed until combined.
- Increase the speed to medium and beat for 8 minutes or until pale and creamy.
- Scrape down the sides of the bowl and add the egg yolks. Beat until well combined.
- Reduce the speed to low and gradually add the buttermilk, vanilla, salt, the remaining flour and the yeast mixture and beat until combined.
- Scrape down the sides of the bowl. Beat for a further 8-10 minutes or until the dough is smooth.
- Turn the dough out onto a lightly floured surface and, kneading gently, bring together.
- Transfer to a lightly greased bowl and cover with plastic wrap. Set aside in a warm place for 2-3 hours or until the dough has doubled in size.
- Brush a 10cm x 20cm (2-liter/2-quart-capacity) loaf tin with half the melted butter. Turn the dough out onto a lightly floured surface. Divide the dough into 4 equal pieces and shape into rounds. Arrange in the prepared tin, cover with plastic wrap and set aside in a warm place for 1-2 hours or until doubled in size.
- Preheat oven to 180°C (350°F). Using kitchen scissors, snip lengthways down the center of the dough in the tin to create 8 portions. Brush the dough with the remaining butter and bake for 30-35 minutes or until golden. Pull the loaf apart and spread with extra butter to serve.
BUTTER BEAN LOAF
Do something different with butterbeans! Serve with yoghurt infused with fresh mint. Can be served hot or cold.

Steps:
- Mix all ingredients, except the tomatoes, together.
- Spoon half the mixture into a greased loaf tin, arrange tomato slices on top, and spoon remaining mixture on top of that.
- Bake at 350 F for 50-60 minutes.
- (Allow to cool for about 10 minutes before turning out.).

- In a large bowl, combine the eggs, 1 cup ketchup, beans, bread crumbs, onion, celery, Worcestershire sauce, lemon-pepper and seasoned salt; crumble beef over mixture and mix well. , Shape into two loaves. Place in a 13x9-in. baking dish coated with cooking spray., In a bowl, combine water and remaining ketchup; pour over meat loaves. Bake, uncovered, at 325° for 70 minutes or until meat is no longer pink and a thermometer reads 160°.

- Start by washing and rinsing the red beans prior to soaking. Soak the red beans overnight. When you're ready to start cooking the paste, transfer the red beans and about 1 1/2 cups (355 ml) of the water to a medium (2 qt.) pot. Ensure that the water level is about ¼" above the red beans. Bring to a boil, then turn down the heat to simmer. Cook the beans until completely softened, stirring occasionally to prevent sticking. This should take about 40 minutes to 1 hour, but can vary widely depending on the age of the beans. Very old beans may never soften, so make sure to buy high quality beans.
- To save time, make the milk bread dough while the red bean paste is cooking. In the bowl of a mixer, add the heavy cream, milk, egg, sugar, cake flour, bread flour, yeast, and salt. Use the dough hook attachment, and turn on the mixer to “stir.” Let it go for 15 minutes, occasionally stopping the mixer to push the dough together. If you're in a humid climate and the dough is too sticky, feel free to add a little more flour 1/4 cup at a time until it comes together. The dough should be moist, but not so sticky that it sticks excessively to the bowl or dough hook. If you don't have a mixer and would like to knead by hand, extend the kneading time by 5-10 minutes.
- Grease one standard loaf pan on all sides with butter. Also, line a cookie sheet with parchment paper.
