BUTTER BEANS WITH HAM HOCKS image

Steps:

  • 1. IF USING SMOKED HAM HOCKS ,WASH AND PUT IN A LARGE POT , ADD SALT , PEPPERS, GARLIC POWDER AND ONION, BRING TO A BOIL ...TURN HEAT DOWN TO SIMMER UNTIL MEAT IS VERY TENDER ( ABOUT 3 HRS.)
  • 2. IF YOU ARE USING A HAM BONE ,PUT THE HAM BONE AND WATER IN A LARGE SAUCEPAN. COVER AND HEAT TO BOILING. REDUCE THE HEAT TO SIMMERING AND COOK, COVERED, 45 MIN. REMOVE THE HAM BONE FROM THE SAUCEPAN. REMOVE THE MEAT FROM THE BONE, AND FINELY SHERD IT. AND RETURN BOTH MEAT AND BONE TO THE PAN.
  • 3. WASH THE BUTTER BEANS AND ADD THEM TO THE SAUCEPAN. HEAT TO SIMMERING NOW ADD OKRA AND VEGETABLE SHORTENING AND SUGAR SIMMER FOR ABOUT 30 MIN. OR UNTIL TENDER. SERVE WITH HOT CORN BREAD

1 meaty ham bone or 3 large smoked ham hocks
1 1/2 lb butter beans
2 Tbsp vegetable shortening...solid
1 Tbsp sugar
1/2 lb okra, washed and thinly sliced
1 Tbsp salt
2 Tbsp freshly ground black pepper
1 Tbsp garlic powder
1/2 tsp red pepper flakes
1/2 small onion , diced
1/2 small bell pepper ,diced
cooked hot corn bread

OLD FASHIONED BUTTER BEANS & HAM

There's nothing better than a big bowl of these beans with a slice of fresh homemade bread slathered in butter. I use a 1 lb. bag of large dried lima beans for this. From my collection of handwritten recipes. Note: soak beans overnight or use quick-soak method.

Old Fashioned Butter Beans & Ham image

Steps:

  • Half fill a large saucepan with water and stir in the beans, ham hock, quartered onion, garlic and bay leaves. Bring to a boil, then lower the heat and simmer, uncovered for 1 hour or until the beans are tender. Drain the beans, reserving all of the liquid and discarding the onion, garlic, and bay leaves. Transfer beans to a bowl and the ham hock to a cutting board. Cut the meat into small pieces (you should have about 1 cup). Discard the bones. In the same saucepan, melt the butter over medium heat. Add the chopped onion and saute for 5 minutes or until tender. Stir in the ham and enough bean liquid to make the beans soupy (about 2 cups); bring to a boil. Lower heat and simmer, uncovered, for 5 minutes. Stir in the beans, hot sauce, and salt and pepper to taste; heat for 3 minutes or until hot. Ladle into bowls (I like to add a couple of drops of catsup) and serve with warm fresh homemade bread and butter.

  • In a large Dutch oven, heat olive oil over medium-high heat. Add onion and celery; cook, stirring frequently, until soft, about 5-8 minutes. Add garlic and cook for 1 more minute, stirring constantly.
  • Add the rinsed beans, ham hock, bay leaf, water, salt and pepper. Bring to a boil; reduce heat slightly just so that it’s at a low boil, and cook for 20 minutes. Reduce heat again just so that the liquid is simmering. Cover and cook for about 1 ½ hours, or until beans are tender. Check the beans after 1 hour, because they may be soft enough at that point if you like your beans a bit more firm. If you prefer the beans really soft and broken down, you may prefer to extend the cooking time to 2 hours. While the beans are cooking, check to occasionally make sure that the beans are covered with water (adding more water, if necessary). Discard bay leaf, remove ham hock from the pot, and shred or chop the meat. Return chopped meat to the pot with the beans. Taste and season with additional salt and pepper, if necessary. Garnish individual servings with hot sauce and herbs; serve with cornbread.

  • Add the beans to a large pot or dutch oven. Add the ham hock, water, and salt. Bring to a boil, reduce the heat to a low boil, and cook for about 20 minutes. Reduce the heat to a simmer, cover tightly and cook for 1 1/2 to 2 hours, or until the beans are tender to your liking. Add water to keep the beans just covered. Stir less frequently to allow the beans to stay intact, or stir more often to create a thick, rich broth. Be sure to see the blog post for details. Add the pepper and additional salt to taste. If desired, remove the hock, shred the meat, and return it to the pot.
  • Place beans, water, ham hock, salt and pepper in a 6 quart slow cooker and cover. Cook on high for 5 hours (or low for 7 to 8 hours) or until the beans are tender to your liking. Stir well and adjust seasoning to your taste. If needed, add hot water to the beans to keep them covered as to not drop the temperature as they cook. If desired, remove the hock, shred the meat, and return it to the slow cooker.
