BUTTER CAKE / STRAWBERRY WHIPPED CREAM

My Mom made this buttery cake filled with luscious strawberry cream. Yum! What's not to like? This is one of my very favorite cakes. I hope you enjoy it as much as we do. Don't let the long list of instruction intimidate you, it's not a hard cake to make.

Butter Cake / Strawberry Whipped Cream image

Steps:

  • Preheat oven to 350° F. Lightly coat 2 - 9 inch cake pans with non stick cooking spray.
  • Sift the cake flour, sugar, baking powder and salt into a large mixing bowl. Add softened chunks of butter and mix on low for 20-30 seconds. The mixture should be lumpy. Add the milk and vanilla extract. Mix on medium speed to thoroughly blend the ingredients. Scrape down the sides of the bowl and add in the eggs ones at a time making sure to combine well before adding each egg. Divide the batter evenly between the two pans. Bake until the cakes are golden brown and a toothpick inserted into the center comes out clean, approximately 30-35 minutes.
  • Set the pans on a cooling rack and allow them to completely cool. Run a knife around the edge of each and invert the cakes onto the racks. With a serrated knife, cut each round cake in half horizontally through the center so that you end up with four rounds.
  • To make the whipped cream center, pour the whipping cream into a medium mixing bowl. Whip on medium speed for two minutes then go up to high until the cream thickens. Add the sugar and vanilla. Continue whipping until soft peaks form. Pureé the fruit in a food processor along with two tablespoons of sugar and the lemon zest. Gently fold the fruit pureé into the whipped cream. Place one of the bottom cakes onto a cake platter. Top with approximately one cup of the whipped cream and spread evenly. Arrange 1/2 cup of sliced strawberries around the edge of the cake. Place the second layer on top of that and continue layers of cake, whipped cream and strawberry slices until all four layers are finished. Top with sliced strawberries.

  • Beat cream cheese and butter together in a mixing bowl using an electric mixer until smooth and creamy. Add 1 cup confectioner's sugar, strawberries, strawberry extract, vanilla extract, and red food coloring. Mix on medium speed until smooth. Gradually add remaining confectioner's sugar, 1 cup at a time as needed, until desired consistency is reached.

This cake has a wonderful, fresh strawberry taste similar to the flavor combination of strawberry shortcake in a delicate pink layer cake. The color and the flavor are subtle yet delicious. No neon pink here! Just fantastic strawberry flavor. I served this at my daughter's sixth birthday with friends and family and everyone loved it, describing it as 'bakery quality'.

Fresh Strawberry Cake with Strawberry Buttercream Icing image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour 2 round 9-inch cake pans that are at least 1 1/2 inches high.
  • Sprinkle strawberries with sugar in a bowl and let sit for at least 20 minutes, or until juices accumulate.
  • Puree strawberries in a blender until smooth and set aside.
  • Combine sugar, butter, and vanilla extract in a separate bowl and beat with an electric mixer. Add eggs and beat until smooth. Add 1 cup strawberry puree, oil, strawberry extract, and food coloring. Mix well. Add flour, gently folding until well mixed. Pour batter evenly into the prepared cake pans.
  • Bake in the preheated oven until a toothpick inserted into the centers comes out clean, about 30 minutes. Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Let cool, about 30 minutes.
  • Make the frosting while the cakes cool. Combine confectioners' sugar, butter, heavy cream, 4 tablespoons of strawberry puree, and vanilla extract in a bowl. Whip thoroughly, adding more puree to color and taste as needed.
  • Sandwich cake layers with frosting. Cover the top and sides with remaining frosting.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 9 inch round cake pans.
  • In a large bowl, beat sugar, gelatin and butter until fluffy. Add eggs one at a time, beating well with each addition. Mix flour and baking powder, and beat alternately with the milk into the sugar mixture. Fold in 1 teaspoon vanilla and pureed strawberries. Divide equally into three 9 inch round cake pans.
  • Bake 25 minutes in the preheated oven, or until toothpick inserted into cake comes out clean. Cool for 10 minutes in the pans, then remove from pans and cool completely.
  • To make the filling: Beat whipping cream, 2 tablespoons sugar and 1/2 teaspoon vanilla on high until stiff. Fill each layer with 1/3 of the whipped cream and 3/4 cup sliced strawberries.
  • To make the frosting: Beat the margarine, cream cheese, confectioners' sugar, and vanilla until creamy. Spread over the sides of the cake, and pipe an edge of frosting around the top of the cake.
  • Spread remaining whipped cream on cake top. Top with quartered strawberries.

CARRY CAKE WITH STRAWBERRIES AND WHIPPED CREAM

This recipe has been in my mother's family for over 100 years. In fact, the tube cake pan I use is my grandmother's, which she bought in the 1930s. I jazzed it up with the strawberries and whipped cream. My grandkids go crazy for this rendition of strawberry shortcake served with vanilla ice cream.

Carry Cake with Strawberries and Whipped Cream image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch tube pan.
  • In a small saucepan, combine the butter and milk. Warm until butter has melted, but do not boil. In a medium bowl, beat the eggs with 1/2 teaspoon of salt and 2 cups sugar. Stir in the warmed milk and butter and vanilla. Combine the flour and baking soda; stir into the batter just until blended. Pour into the prepared pan.
  • Bake for 55 minutes in the preheated oven, or until a knife inserted into the crown of the cake comes out clean. Cool in the pan for at least 15 minutes before removing and placing on a wire rack to cool completely.
  • In a mixing bowl fitted with a whisk attachment, combine the cream cheese, sugar, vanilla and salt. Beat at medium speed until smooth. Pour the heavy cream in a slow steady stream while the mixture is whipping until the mixture has fluffed up and can hold a stiff peak. Don't let it get grainy looking though. Scrape the bottom of the bowl with a spatula occasionally to remove any lumps.
  • Slice the cooled cake horizontally into three layers. Arrange strawberries on the bottom layer with the top ends facing outward. Fill in the remaining space with more berries. Spoon some of the whipped cream over the berries and spread evenly. Place another layer of cake on top and repeat the process. Place the top layer on the cake and cover with the remaining cream. Arrange remaining berries over the cream.

  • Place egg whites in a large bowl; let stand at room temperature for 30 minutes. , In another bowl, beat egg yolks until slightly thickened. Gradually add 3/4 cup sugar, beating until thick and lemon-colored. Beat in the lemon juice, oil and water.
