Steps:

  • Line a baking sheet with plastic wrap. Wearing rubber gloves, wash the cactus pears and with paper towels, rub off any prickly fuzz left on the skin. Halve the pears lengthwise. Carefully scoop out the flesh and seeds and put them into a blender, leaving the thick shells intact. Put the shells onto the baking sheets and freeze them until hard, about 1 hour.
  • Add the syrup and lime juice to the blender and puree until smooth. Taste and adjust the flavor with more syrup or lime juice, to taste. Strain the puree through a fine sieve, discarding any seeds and pulp.
  • Pour the sorbet into the frozen shells, smoothing the surface so they are level. Cover with plastic wrap and return the filled shells to the freezer for at least 6 hours. Frozen sorbet shells may be wrapped individually in plastic wrap and kept in the freezer for 1 week.
  • Put the sugar and water into a saucepan over medium-high heat and bring to a boil, stirring to dissolve the sugar. Remove from heat and cool before using. Syrup can be stored, covered, in the refrigerator, for 1 month.

8 prickly (cactus) pears (3 pounds total)
1/2 cup simple syrup, recipe follows
2 tablespoons lime juice
1/2 cup sugar

Steps:

  • Wearing your rubber gloves, wash and skin pears. Be careful of the very tiny spines. Add all ingredients except mint to a blender and puree until smooth. Reduce liquid in half on medium heat. Strain and let cool.
  • Note: Before freezing the puree, adjust the flavor with sugar and cranberry juice, to taste. Freeze puree in an ice cream maker and you're ready to scoop.
  • Garnish with fresh mint.

10 prickly pears (about 4 pounds)
1 cup simple syrup
2 tablespoons fresh lime juice
2 tablespoons lemon juice
2 tablespoons orange juice
1/4 cup lime zest
Fresh mint leaves, for garnish

CACTUS FIG AND LIME SORBET

The fruit of the prickly pear cactus (often called 'cactus fig' or 'tuna,') is sweet and juicy. Coupled with lime and frozen, it makes a light, refreshing summer treat. You can find cactus fig at any Mexican grocery and at some gourmet markets.

Steps:

  • Remove the outer skin of the cactus figs to expose the light green flesh. Push the flesh through a mesh sieve into a bowl, collecting the juice and trapping the seeds and pulp.
  • Combine water and sugar in a saucepan over medium heat. Bring to a boil, stirring frequently until thickened, about 5 minutes. Remove from heat; allow to cool slightly, about 15 minutes.
  • Stir cactus juice and lime juice into the sugar water. Mix thoroughly; chill for 1 hour.
  • Pour cactus-lime mixture into an ice cream maker and freeze according to manufacturer's instructions, about 20 minutes. Transfer to an airtight container and freeze until firm, about 4 hours.

  • Prickly Pear Juice. This vibrant red juice is as yummy as it is gorgeous. You can make it with nothing more than prickly pears. Wash, peel, and puree them until they’re drinkable.
  • Prickly Pear Syrup. Prickly pear syrup is just as fantastic. However, it’s sweeter, thicker, and doesn’t include limes. You make it with prickly pears, sugar, and water.
  • Prickly Pear Margarita. I’ve talked about cocktails too much, and now I want one. Let’s check out a couple of recipes for them, shall we? We’ll start with this hot pink margarita.
  • Prickly Pear Bourbon Cocktail. The bourbon cocktail isn’t as sweet as the margarita. However, it is fruity, delicious, and refreshing. With two ounces of liquor, it’s reasonably strong.
  • Prickly Pear and Lime Sorbet. Don’t you just adore naturally bright food and drinks? When something is a vibrant red or bold blue, I love it. This tart and tangy sorbet doesn’t need any food coloring to shine.
