CAJUN PARTY MEATBALLS
Wanting something a little different thought I would like to add something beyond Cranberry sauce and chili sauce to my meatballs... not that there is anything wrong with this, I am having those too!! My spread this year will consist of meatballs from sweet and sour to meatballs with a kick!

Steps:
- 1. Preheat oven to 350° F. Lightly spray a medium baking sheet.
- 2. In a large bowl, mix thoroughly the ground beef, pork, liquid smoke if you choose, hot pepper sauce, Cajun seasoning, Worcestershire sauce, parsley, celery seed, garlic, onion, bread crumbs, milk, and egg.
- 3. Form the mixture into golf ball sized meatballs and place on the prepared baking sheet. Bake in preheated oven for 30 to 40 minutes, or until there is no pink left in the middle.
- 4. Combine the barbeque sauce and preserves in a bowl and set aside. When meatballs are done in the oven, place in the crock pot and cover with the barbeque sauce mixture and set on low for approximately an hour to warm preserves. Toss to coat before serving. You can leave them in the crock or put into a fondue pot to keep warm and look festive.
CAJUN APPETIZER MEATBALLS
These meatballs have a little kick to them. Amount this recipe makes depends on size you make your meatballs.

- In a large bowl, mix thoroughly the ground beef, hot pepper sauce, Cajun seasoning, Worcestershire sauce, parsley, onion, bread crumbs, milk, and egg.

CAJUN MEATBALLS

- Put the butter in a pan over a low heat. Stir in the flour and cook, stirring all the time to make a roux. Cook until the roux is hazelnut brown in colour - make sure that it doesn't burn. Tip in the vegetables, garlic and bay leaf, stir briefly, then pour in the tomatoes and 1½ cans of water. Crumble in the stock cube, add the hot sauce, then cover and cook for 15 mins, stirring occasionally, while you make the meatballs.
- Work the spice and some seasoning into the turkey mince. Try not to over-handle or it will toughen. Shape into 20 meatballs.
- Heat the oil in a large non-stick pan and quickly brown the meatballs in batches until they are nicely coloured on all sides.
- Stir the sauce, then drop in the meatballs and cook on a low heat for 10 mins until the turkey is cooked through. Scatter over the spring onions and coriander, and serve with some rice or mash.

EASY APPETIZER MEATBALLS

- Combine pork sausage and spicy pork sausage together in a bowl using your hands. Form mixture into meatballs, about 1 tablespoon each.
- Fry meatballs in a skillet over medium heat until browned and completely cooked through, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
- Transfer meatballs to a large bowl and add 1/2 of the orange juice concentrate; gently toss to coat, adding more if needed to completely coat.
- Put meatballs in a slow cooker and add the remaining orange juice concentrate; turn on Low setting to keep warm before serving.
