Steps:
- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
- Fill the jalapeno peppers with cream cheese. Sprinkle the Cajun seasoning on top, then wrap each stuffed jalapeno with a slice of bacon. Secure with a toothpick. Arrange the wrapped jalapeno peppers in a single layer, face down on a broiler rack.
- Broil in the preheated oven until the bacon becomes crisp, 8 to 15 minutes on each side.

- Cut jalapenos in half lengthwise; remove seeds and membranes. In a small bowl, combine the cream cheese, cheddar cheese and Cajun seasoning. Stuff about 1-1/2 teaspoons into each pepper half., Cut bacon strips in half widthwise. In a large skillet, cook bacon until partially cooked but not crisp. Wrap a bacon piece around each pepper; secure with a toothpick. , Place on a wire rack in a shallow baking pan. Bake, uncovered, at 350° for 25-30 minutes or until bacon is crisp. Discard toothpicks. Serve immediately.

GRILLED STUFFED JALAPENO CHILES

- Preheat a gas or charcoal grill, or a stovetop grill pan, over high heat.
- Grill the jalapenos until browned or blistered on all sides and slightly softened, 3 to 5 minutes. Remove from the heat and set aside to cool.
- Meanwhile, mix the cheese and oregano in a small bowl. Season with some salt and pepper.
- To remove the seeds from the jalapenos, make a crosswise cut at the stem-end of the jalapeno and then slice lengthwise down the middle, being careful not to cut the jalapeno completely in half. Peel open the sides of the jalapeno and, using a spoon, gently scrape out the seeds and veins. Fill the cavities with 1 tablespoon of the cheese-oregano mixture. Then wrap 1 slice of bacon tightly around the stuffed jalapeno to seal in the cheese. Transfer to the hot grill (try to place the jalapeno on the grill on the side where the bacon ends). Grill until the bacon is crisp and fully cooked, 5 minutes. Serve immediately.

- Cook bacon in a skilletover medium heat until crispy.
- Remove bacon, and drain on paper towels, and crumble bacon.

- Preheat oven to 400 degrees. Line a baking sheet with aluminum foil. Arrange bacon slices on the foil.
- In the center of a second sheet of aluminum foil, add the chopped onion, garlic, cumin and olive oil. Fold foil around the mixture and seal tightly. Place the sealed foil pouch in an oven safe dish and place in the oven with the bacon. Bake for 15 to 20 minutes, until the bacon is brown and crispy and the onions are soft and fragrant. Remove from the oven. Be sure to move the bacon to a paper towel to let cool. Open the foil pouch and let cool. Be careful of steam.

- Cut off the stem end of the peppers. Core the peppers, scraping out the seeds and ribs using a small measuring spoon. Toss the cheese, ancho pepper, garlic powder, and cumin in a medium bowl until the spices are evenly distributed. Pack the peppers with cheese, overflowing them slightly, setting each pepper in the pepper rack as you finish it.
- Set the grill up for indirect high heat: Set the grill up for a two-zone fire, with one zone set to high heat, and the other with no heat. For my Weber Summit, I preheat the grill with all burners on high for 15 minutes, brush the grill grates clean, then turn off all burners except for burners #1 and #2.
- Grill-roast the peppers over indirect heat for 20 minutes: Put the rack of peppers on the grill over indirect heat, not directly over the flames. Close the lid and grill until the cheese melts and browns and the peppers soften, about 20 minutes.
- Serve: Remove the rack from the grill. (Be careful, and protect your hands – the rack is very hot.) Set the rack on a heat-safe surface and let the stuffed peppers cool for five minutes, then remove them from the rack and serve.
