SUMMER LAMB KABOBS

This is an awesome treat for the grill. We raise grass-fed lambs that are weaned naturally. Experimenting with lamb recipes over the past 15 years has become a hobby. Lamb and garlic go so well together. In this recipe, the combination of herbs and spices complement this meat and make a great family-and-friend favorite.

Summer Lamb Kabobs image

Steps:

  • Place lamb in a large bowl.
  • In a separate bowl, stir together mustard, vinegar, olive oil, salt, pepper, rosemary, sage, and garlic. Pour over lamb, and mix to coat meat. Cover, and refrigerate overnight.
  • Preheat outdoor grill for direct heat.
  • Add marinated lamb, fruit, and vegetables to stainless steel or bamboo skewers. Reserve some of the juice from pineapple chunks and cherries.
  • In a small bowl, stir together melted butter and splashes of juice from the pineapples and cherries to create a basting sauce.
  • Place skewers on preheated grill, and cook about 12 minutes, turning and brushing with butter sauce.

5 pounds boneless lamb shoulder, cut into 1 inch pieces
6 tablespoons Dijon mustard
4 tablespoons white wine vinegar
4 tablespoons olive oil
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon chopped fresh rosemary
½ teaspoon crumbled dried sage
4 cloves garlic, chopped
4 green bell peppers, cut into large chunks
1 (10 ounce) package whole fresh mushrooms
1 (16 ounce) can pineapple chunks, drained with juice reserved
1 pint cherry tomatoes
4 onions, quartered
1 (10 ounce) jar maraschino cherries, drained and juice reserved
⅓ cup melted butter or margarine

Steps:

  • Measure all the ingredients into a jar, screw on the lid and shake everything together really well.
  • Toss 4 lean lamb leg steaks in the juice of 1 lemon and set aside in a non-metallic dish for 3-4 minutes. Sprinkle each side of the steaks with 1⁄2-1 tsp of the spice mix, rub it into the meat and marinate for 2-4 hours. If you're pushed for time and can't leave it this long the spice mix will still work but will be a little fiercer. To cook, smear the meat with 2-3 tbsp olive oil and barbecue for 3-4 minutes on each side.

  • Using a sharp knife, cut the lamb meat off the bone, slice the larger pieces in half so you have similar-sized pieces, and put the lamb in a bowl or glass dish. The video shows exactly how to do this. (First slice down the center T-bone on one side (between the bone and meat) and then when you get to the bottom part of the bone, press the knife towards the meat (while moving it in a back-and-forth motion to gently slice) to free the meat from the bone and any tough silver skin on the meat. Repeat on the other side of the bone. You will end up with 2 pieces of meat per lamb loin chop. Cut the larger piece in half so that you end up with a total of 3 similar-sized cubes of lamb per loin chop.)
  • Heat up the tortillas on the grill for about 20-30 seconds a side or until it starts to bubble up. Remove from grill and start assembling wrap.

  • Divide the meat into 16 sections. Mold each section of meat around a bamboo skewer, making it a few inches long and about 1 inch (2.5 cm) thick. You'll fit 2 sections of meat per skewer, about 1-2 inches apart.
  • Preheat the grill to medium-high heat and oil the grates lightly. Place the skewers on the grill and cook for 3 minutes. Flip and cook for 3-5 more minutes, to desired level of doneness.   • Cut the lamb into 1 to 1 1/2 -inch cubes or pieces and put them in a large bowl. Season with kosher salt and black pepper.
