CAJUN PORK BURGERS

Steps:
- Heat oven to 375°. Heat oil in 10-inch nonstick skillet over medium-high heat. Cook frozen bell pepper mixture and celery in oil 3 to 4 minutes, stirring occasionally, until tender. Stir in parsley; remove from skillet. Cover to keep warm.
- Mix pork, chili sauce, garlic salt, thyme and red pepper. Shape mixture into 4 oval patties, 1/2 inch thick. Cook patties in hot skillet over medium heat 8 to 10 minutes, turning once, until no longer pink in center.
- Place buns, cut sides up, on ungreased cookie sheet. Bake 3 to 5 minutes or until toasted. Serve patties on buns topped with vegetables.

CAJUN PORK BURGERS WITH SPICY REMOULADE SAUCE
Steps:
- For the Remoulade Sauce: Prepare sauce by combining all sauce ingredients in a small bowl. Refrigerate covered for 1 hour while flavors meld.
- For the burgers: In a large mixing bowl, combine ground pork, Cajun seasoning, scallions, hot sauce, and salt and pepper, to taste. Wet your hands to prevent sticking and shape into 4 patties slightly larger than the size of the buns. Cover with plastic wrap and set aside in refrigerator if not cooking immediately.
- Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking. Place burgers on hot oiled grill and cook 5 to 6 minutes per side or until desired doneness. Serve hot on toasted buns with lettuce, tomato, onions, and a dollop of the Remoulade Sauce.
- INDOOR: Prepare burgers as directed. Heat 2 tablespoons of oil in a large skillet or frying pan over medium-high heat. When oil is hot add burgers and cook 6 to 8 minutes per side or until done.

- SET UP: Prepare a grill or grill pan and heat to medium-high heat.
- FORM THE PATTIES: Gently mix the ground beef, Cajun seasoning, and scallions. Form into four 1/2-inch-thick patties.
- MIX THE REMOULADE: Combine the mayonnaise, mustard, hot sauce, parsley, and celery in a small bowl. Refrigerate until needed.
- GRILL EVERYTHING: Grill the patties, flipping once, to desired doneness, about 4 minutes per side for medium. Brush the onion and green pepper with the oil and grill the vegetables until lightly charred and tender, about 5 minutes total.
- SERVE: Toast the buns on the grill for a minute or so. Put a patty on the bottom bun and top with remoulade. Add some onion and bell pepper, then add the top bun.
PERFECT PORK BURGERS

- Pulse the bacon and garlic in a food processor until coarsely ground.
- Combine the ground pork, 1 teaspoon salt, 1/4 teaspoon pepper and the sage in a large bowl. Add the bacon mixture and gently mix with your hands. Gently form the meat into 4 balls, then lightly press into 4-inch-wide, 1-inch-thick patties. Make a 2-inch-wide indentation in the center of each with your thumb to prevent the burgers from bulging when grilled.
- Preheat a grill to medium high. Season the patties with pepper. Grill, undisturbed, until marked on the bottom, 5 to 6 minutes. Turn and grill until the other side is marked and the patties feel firm, 4 to 6 more minutes. Meanwhile, spread the cut sides of the buns with butter and toast on the grill.
- Serve the patties on the buns; top with coleslaw.

- Cook the sweet potato in a pan of lightly salted boiling water for 15-20 minutes, or until soft when pierced with a fork. Drain well, then mash and set aside.
- Place the ground pork in a bowl, add the mashed potato, grated apple, and Cajun seasoning. Grate 1 of the onions and add to the pork mixture with salt and pepper to taste and the chopped cilantro. Mix together, then shape into 4-6 equal-size burgers. Cover and let chill for 1 hour.
- Slice the remaining onions. Heat 1 tablespoon of the oil in a skillet. Add the onions and cook over low heat for 10-12 minutes, stirring until soft. Remove the skillet from the heat and set aside. Wrap each burger in 2 slices of bacon.
- Preheat the barbecue. Lightly brush the burgers with oil, and cook over hot coals for 5-6 minutes on each side, or until cooked to personal preference. Serve with the fried onions.
