LINGUINE WITH CAJUN-SPICED SHRIMP AND CORN
After throwing some ingredients together for tapas, the flavor was so fresh and light my family asked for more. By warming it through with a few more ingredients I turned it into a family meal with pasta instead of just a snack.

Steps:
- Bring a large pot of lightly salted water to a boil. Add linguine and cook until al dente, 8 to 10 minutes; drain.
- Place shrimp and crab boil into a large saucepan. Fill with water to 1 inch above the shrimp, and bring to a boil over high heat. Boil for 3 minutes until shrimp turn pink, then drain.
- Meanwhile, melt butter in a large skillet over medium-high heat. Stir in garlic, and red onion, cook until the onion softens and turns translucent, about 4 minutes. Stir in bell pepper, corn, lime juice, cilantro, oregano, chipotle pepper, and salt. Stir in the half-and-half, and bring to a simmer. Once the mixture is simmering, stir in shrimp, and toss with the drained pasta.

- Cook linguine according to package directions. Meanwhile, in a large skillet, saute the green pepper, onion and garlic in oil until tender. Stir in the tomatoes, Cajun seasoning and pepper sauce. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. , Add shrimp; cook for 5-6 minutes or until shrimp turn pink. Drain linguine; toss with shrimp mixture. Sprinkle with mozzarella cheese.

- 1. Cook pasta according to package directions, omitting salt and fat. Drain in a colander over a bowl, reserving 1/3 cup pasta cooking liquid.
- 2. Heat a large skillet over medium-high heat. Combine Cajun seasoning and shrimp in a medium bowl; toss to coat. Add 1 tablespoons oil to pan; swirl to coat. Add shrimp mixture to pan; cook 2 to 3 minutes or until shrimp are done. Remove shrimp mixture from pan. Wipe pan clean with paper towels.
- 3. Add remaining 1 tablespoons oil to pan; swirl. Add onion, bell pepper, celery, and 1 tablespoons thyme; cook 5 minutes, stirring occasionally. Add red pepper and garlic; cook 3 minutes. - To form the roux, melt 1/3 cup butter in a saucepan over medium heat until a pinch of flour sprinkled in the butter begins to bubble. Whisk in the flour to form a thick paste the consistency of cake frosting. Continue cooking, whisking constantly, until the flour turns peanut butter-brown, about 35 minutes.
- Melt 4 tablespoons butter in a small saucepan over medium-high heat. Add celery, onion, bell pepper, and garlic; cook until tender, about 4 minutes. Move half of the vegetables to a large saucepan.
- Pour roux into the small saucepan; heat over medium-low. Add diced tomatoes and green chiles, tomato paste, onion powder, garlic powder, white sugar, and cayenne pepper.
- Stir in tomato sauce and vegetable oil to the vegetable mixture in the large saucepan. Add roux mixture and 1 cup water. Bring to a simmer; cook 10 minutes. - In a large, deep skillet, heat the oil and 2 tablespoons of the butter over med-high heat.
- Dust the shrimp evenly with the Cajun seasoning and add them to the pan.
- Cook the shrimp, turning once, until they are just opaque and cooked through, about 3 minutes.
- Transfer the shrimp to a plate.
- In a large pot of boiling salted water, cook the pasta according to the package directions; drain well.
- Meanwhile, as the pasta cooks, melt the remaining 2 tablespoons butter in the pan.
- Add the garlic and cook for 30 seconds.
- Add the broth and hot sauce.
- Bring to a simmer and stir up any browned bits from the pan.

- In a bowl, toss shrimp and paprika together to coat; set aside.
- Heat a large non-stick over medium-high heat. Pan-fry sausage slices for about 4 minutes or until golden brown; transfer to a plate. Wipe our skillet with a paper towel. In a small bowl, whisk flour into cream and add water.
- Return skillet to medium-high heat and add cream mixture along with garlic, thyme and cayenne pepper. Bring to a boil and add shrimp; simmer for about 4 minutes until shrimp are pink and firm. Return sausages tor skillert and warm through.
- Meanwhile, in a large pot of boiling salted water, cook linguine for about 3 minutes or until tender but firm. Drain well and add to skillet. Cook, stirring, on low heat for about 2 minutes or until sauce coats pasta well.
- Serve in shallow soup bowls and sprinkle with green onion.
- TIP: If the smoked sausages are spicy, reduce cayenne pepper to 1/8 teaspoons.
