THE BEST HOT WINGS EVER
My own recipe. I've been making these for years and every time I tweak it up a bit to make it hotter and hotter and to find the right taste. These are very spicy, but of course you can control the heat by adjusting the amount of peppers.

Steps:
- **To make the sauce:.
- Melt butter. Add hot sauces, soy sauce and peppers. It doesn't matter if the chipotles are dried or in adobo sauce. Either way is good.
- Set aside in a pan.
- **To prepare wings:.
- *Divide wings, discarding the tips.
- *Deep fry in batches, until browned.
- *Drain each batch on paper towels.
- *After each batch is drained, toss into hot sauce mixture.
- Note: Once all the wings are in the sauce, toss, cover and simmer for a few minutes. This step isn't absolutely necessary, but lets the wings absorb more of the sauce.

"CALL THE FIRE DEPARTMENT" HOT WINGS
My family loves hot wings! After several attempts of trying to re-create the restaurant hot wings, I finally came up with this recipe which my whole family seems to approve. My husband thinks they could be hotter, but then again, he adds red pepper flakes to most of his food. The kids and I think they are hot enough, but add even more Tabasco if you wish!

GRILLED LOUISIANA HOT WINGS
This is one of the simplest wing recipes I've ever made and is sure a crowd pleaser. You can even grill ahead and reheat in the oven or serve at room temperature.

- Melt the butter in a small pan over medium-high heat. Add the garlic and a pinch of salt. Cook, stirring consistently, for 1-2 minutes or until the garlic is very fragrant.
- Pour the garlic and butter into a large sized mixing bowl. Add the remaining ingredients and whisk together well. Set aside until the wings are cooked.
- In a large, heavy bottom saute pan, add the olive oil over high heat. When the oil shimmers, add in 1/2 of the wings. You don't want to crowd the pan. Let the wings cook for 1-2 minutes to get nice and crispy. Turn to brown on all sides. Remove from the pan and repeat with the other wings.
- Once all the wings have been browned, add them all back into the pan over medium-high heat. Continue to cook for 10-12 minutes or until cooked through. The drums will take longer than the flats.
