EASY COFFEE SQUARES

I make these often it's a wonderful easy recipe and they are very moist! Serving size is only estimated depending on the size you cut the squares. You can even add in nuts in place of the chocolate chips or use about 6 ounces each!

Easy Coffee Squares image

Steps:

  • Set oven to 350 degrees.
  • Grease a large cookie sheet.
  • In a bowl combine oil, sugar and eggs, beat until well combined.
  • In another bowl, combine dry ingredients, except chocolate chips, then add to the oil/sugar mixture; mix well.
  • Add the vanilla and coffee; mix until combined.
  • Stir in chocolate chips.
  • Spread on a cookie sheet.
  • Bake for about 35 minutes or until bars tests done.
  • Cool and cut into squares.
  • Delicious!

Steps:

  • 1. Sift the flour, baking powder, and cocoa into a bowl and add the butter, sugar, eggs, and coffee. Beat well, by hand or mixer until smooth. Then spoon into a greased and floured shallow 11x7 inch pan and smooth the top.
  • 2. Bake in a 350 degree preheated oven for 35 to 40 minutes, or until risen and firm, then turn out onto a wire rack to cool completely. To make the frosting, place the chocolate, butter and mlk in a bowl and set over a pan of simmering water and stir until the chocolate has melted.
  • 3. Remove the bowl from the pan and sift in the confectioners' sugar. Beat until smooth, then spread over the cake. Dust the top of the cake with sifted cocoa. Cut into 20 squares.

Southern Pecan Pie Cappuccino Squares image

Steps:

  • Heat oven to 350°F Grease bottom only of a 13 x 9 inch baking dish. In medium saucepan, melt 1/4 cup of butter; stir in flour until smooth. Add brown sugar and 2 eggs; mix well. Cook over medium-low heat 5 minutes or until thickened, stirring constantly.
  • Remove from heat. Dissolve instant coffee in hot water; stir into filling. Add 2 t. bourbon, vanilla and pecans; mix well. Set aside.
  • In large bowl combine brownie mix, coffee, oil and 1 egg; beat 50 strokes by hand. Stir in 1/2 cup chocolate chips. Spread in greased pan. Spoon and spread flling evenly over top.
  • Bake at 350°F for 30-40 minutes or until set and deep golden brown. DO NOT OVERBAKE.
  • In small saucepan over very low heat, melt glaze ingredients, stirring constantly. Immediately drizzle over warm brownies. Cool completely. To serve, beat topping ingredients until stiff peaks form. Top each dessert square with whipped cream. Garnish with chocolate dipped pecans, if desired. Store in refrigerator.

Steps:

  • Preheat oven to 350°F.
  • Grease a 13x9-inch pan (I recommend cooking spray- if you use shortening, the bars may seem greasy once cooled).
  • Stir together flour, baking soda, salt and cinnamon in a large bowl; set aside.
  • With an electric mixer, beat butter and both sugars until fluffy.
  • Beat eggs in one at a time, beating well after each addition.
  • Mix in dissolved and cooled coffee, extracts and orange zest.

Steps:

  • Combine flour, baking powder, cardamom, and salt; set these dry ingredients aside.
  • Combine milk and instant coffee in saucepan, and heat at a medium low setting. Stir until coffee dissolves, and remove from the heat.
  • In a large bowl, cream the butter or margarine with the white sugar and 1 cup confectioners' sugar. Beat in the egg, and then beat in the coffee mixture. Gradually blend in the mixture of dry ingredients, and fold in the almonds.
  • Spread dough evenly in a 9 x 13 inch baking pan. Bake for 18-20 minutes at 350 degrees F (175 degrees C), or until toothpick inserted in center comes out clean. Cool in pan on wire rack.
  • To Make Frosting: Put 1 cup of the confectioners' sugar in a mixing bowl. Beat in the evaporated milk and vanilla extract. Gradually beat in remaining 2 cups of confectioners' sugar. Continue beating until of desired consistency. If consistency is too thick, add a little more milk; if it is too thin, add more powdered sugar.
  • Frost the bars with the icing.

Steps:

  • Preheat oven to 350° F and prepare a 8-inch square pan by greasing bottom and sides with vegetable oil or spray.
  • For base, melt butter and stir in sugar. Sift cocoa powder into mixture and blend well. Whisk together egg and vanilla extract and add. Blend in chocolate cookie crumbs, coconut and chopped walnuts until evenly incorporated. Press into prepared pan and bake for 10 minutes. Allow to cool for 10 minutes then chill for 20 minutes.
