Steps:

  • In a large bowl, combine all-purpose flour, cake flour, sugar, salt and baking powder; cover and freeze 30 minutes. Place lard and butter in a separate bowl; freeze 30 minutes. Place flour mixture in a food processor; pulse until blended. Add lard and butter; pulse until mixture is the size of peas., Transfer flour mixture to a large bowl. Mix together egg yolk and 10 tablespoons ice water; gradually add to flour mixture. Toss with a fork until dough holds together when pressed, adding more water if needed. Divide dough into thirds. Shape each into a disk; wrap in plastic wrap. Refrigerate 1 hour or overnight. , In a large saucepan, combine apples, 3/4 cup apple juice, sugar, cinnamon, salt and nutmeg; bring to a boil over medium heat, stirring occasionally. Combine cornstarch and remaining 2 tablespoons juice until smooth; add to saucepan. Return to a boil, stirring constantly. Cook and stir 1 minute or until thickened. Remove from the heat; cool to room temperature. Stir in cranberries., On a lightly floured surface, roll 1 dough portion into a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust even with rim. Pour fruit filling into crust. , Roll out another portion of dough; make a lattice crust. Place over filling. Trim and seal edge. Roll out remaining portion of dough to a 14x4-in. rectangle. Cut four 14x1/4-in. strips. Place 2 strips side by side; twist together. Repeat with remaining 2 strips., For decorative cutouts, cut remaining dough out with a 1-1/2-in. leaf-shaped cookie cutter. With a sharp knife, lightly score cutouts to resemble veins on leaves. Combine egg and milk; lightly brush lattice and edge of crust with egg mixture. Place twists along edge of pie crust, pressing lightly to adhere. Overlap cutouts on the lattice and along edge of pie. Refrigerate pie until crust is well chilled, about 30 minutes., Preheat oven to 400°. Brush cutouts with egg mixture. Cover edges loosely with foil coated with cooking spray. Bake 20 minutes. Remove foil; bake until crust is golden brown and filling is bubbly, 30-40 minutes longer. Cool on a wire rack.

Steps:

  • If you are home-making your crust, reserve 1/3 of it for the decorative top. If you plan on using a frozen crust, just buy two crusts and roll out the second to cut out cute shapes (the magazine suggests leaves, but you can use anything that is small enough to be seen without covering the pie completely).
  • For the Cran-Cherry Compote: In a small sauce pan, mix all ingredients (except the cherries) with a pinch of salt and cook over medium heat until the cherries just begin to burst. Be sure to stir occasionally. When cranberries begin to burst, stir in the cherries and take the pan off the heat to cool.
  • For the Caramel Apple Filling: In a large bowl, toss apples, lemon juice, and lemon peel to coat apples.
  • In a small bowl, mix brown sugar, flour, cinnamon, and 1/2 teaspoons salt. Pour flour mixture over apples and toss to coat.
  • In a large pot on medium heat, melt the butter and add the apple mixture. Cook about 5 minutes stirring the pot frequently. Add the whipping cream and vanilla. Continue cooking, stirring often, until juices thicken and apples are tender (about 5 minutes). Remove from heat, and cool completely.
  • Pie Assembly: Preheat oven to 350°F Using a slotted spoon, spoon one-third of the cran-cherry mixture into the bottom of the crust. Layer half the apple mixture on top of the cranberries. Spoon another third of the cran-cherry mixture on top of the apples in random dollops. Spoon over remaining apples. Spoon remaining cran-cherry mixture on top in random dollops, leaving pockets of apple visible on top (placing the cran-cherry mixture in little pockets keeps the apples from being dyed red). Leave the flat edge of the crust free from filling.
  • Whisk the egg and water together to create an egg wash, and brush over the crust lining. Gently press on your crust cut-outs to adhere them to the pie crust. Place the remaining cut outs at random over the pie, and brush with egg wash.
  • Sprinkle the cut outs with coarse sugar.
  • Place a foil-lined baking sheet on rack below pie in oven to catch any drippings and bake the pie for 35-40 minutes. Then, cover the edges with foil and bake 10-15 minutes more or until crust is deep golden brown and filling is bubbly. Cool 3 hours before serving.

1 (12 ounce) bag fresh cranberries
1 cup granulated sugar
1/4 cup orange juice
2 teaspoons finely shredded orange peel
20 fresh sweet cherries, pitted or 1 cup pitted unsweetened frozen dark sweet cherries
8 tart baking apples, such as granny smith apples, peeled, cored, and sliced 1/4 inch thick or 2 -2 1/4 lbs tart baking apples
2 tablespoons lemon juice
1 teaspoon finely shredded lemon peel
1 cup packed dark brown sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
2 tablespoons unsalted butter
1/4 cup whipping cream
1 teaspoon vanilla bean paste or 1 teaspoon pure vanilla extract
1 egg
2 tablespoons water
2 -3 tablespoons coarse sugar

Steps:

  • For the perfect spiced pie crust: Mix the flour, cinnamon, salt and nutmeg in a bowl. Add the butter and vegetable shortening. Work the butter into the flour using a pastry cutter until the mixture resembles tiny pebbles. Add the white vinegar, egg and 5 tablespoons cold water and stir until just combined.
  • Form 2 equal-sized balls. Place each in a large plastic bag (do not seal) and slightly flatten with a rolling pin; this makes it much easier to roll out the crust later. After flattening, seal the bag tightly. Place in the freezer for 15 to 20 minutes to chill.
  • Preheat the oven to 375 degrees F.
  • Remove 1 bag of dough from the freezer (save the other dough for another use), remove the dough from the bag and place it on a lightly floured surface. Roll the dough starting at the center and working outward. Be gentle and patient; it'll take a little time to get the dough completely rolled out. If you think the bottom is really sticking to the surface below while rolling, use a metal spatula to loosen it. When fully rolled out, loosen again with a spatula and lift the pie crust into a 9-inch pie pan (or you can roll the pastry over the rolling pin, lift it onto the pie pan and unroll it). Gently press the dough against the corner of the pan and tear off any excess dough. Then tuck under the edges and go around the pie pan pinching the dough to crimp the edge.
  • For the pie filling: In a bowl, mix the apples, lemon juice, granulated sugar, flour and salt. Set aside.
  • For the crumb topping: Cut the butter into the flour with a pastry cutter, then add in the brown sugar, oats and salt.
  • Add the apples to the prepared pie shell and top with the crumb topping. Bake for 1 hour, covering the edge of the crust with foil if it starts to brown too quickly. After an hour, sprinkle the chopped pecans over the pie, then bake for a further 5 minutes.
  • Remove the pie from the oven and pour 1/2 jar (or more, if you're feeling dangerous and naughty) of caramel topping over the top. Allow to cool slightly before serving - or don't if you can't wait!

3 cups all-purpose flour, plus more for flouring
1 teaspoon ground cinnamon
1 teaspoon salt
1/2 teaspoon ground nutmeg
1 1/2 sticks (12 tablespoons) salted butter, cut into pieces
3/4 cup vegetable shortening or lard
1 tablespoon distilled white vinegar
1 egg, lightly beaten
6 to 7 cups peeled and sliced Granny Smith apples
1/2 lemon, juiced
1/2 cup granulated sugar
1/4 cup all-purpose flour
1/4 teaspoon salt
1 1/2 sticks (12 tablespoons) unsalted butter
1/2 cup all-purpose flour
1 cup packed brown sugar
1/2 cup quick oats
1/4 teaspoon salt
1/2 cup pecans, chopped
1/2 jar (or more) caramel topping

CARAMEL APPLE CRANBERRY PIE

CARAMEL APPLE CRANBERRY PIE

I wanted a pie that combined the best-loved flavors of the season: apples, cranberries, cinnamon, and nutmeg! We had 5 different types of pie this Thanksgiving, and this pie received the most compliments. It was so good, I'm seriously thinking about entering it in our county fair this summer!

  • Maple Bourbon Apple Pie. The lattice top on this easy apple pie recipe only looks complicated to make. All it takes is cutting strips of crust and layering them together.
  • Pecan Pie. Old fashioned pecan pie is a Thanksgiving staple. Our Test Kitchen perfected the traditional recipe and added a splash of vanilla to the filling.
  • Caramel Apple-Cherry Pie. A fan favorite, this Thanksgiving pie recipe is filled with caramel-coated granny smith apples and a sweet cranberry-cherry compote.
  • Vegan Pumpkin Pie. This vegan pumpkin pie recipe is every bit as silky and luscious as a traditional slice. We've swapped in coconut milk for the filling and whipped cream but kept the warm seasonal spices, creamy pumpkin, and flaky crust.
  • Cranberry Pie with Honey Meringue. Sweet meets tart in this Thanksgiving pie. Top a tangy cranberry filling with piles of homemade honey meringue and torch before slicing.
  • Honey Crunch Chocolate Pecan Pie. You can use any pastry crust recipe for this pie (although we're partial to this all-butter recipe). Fill the crust with a homemade bourbon-chocolate filling and bake.
  • Snickerdoodle Custard Pie. There's a decadent surprise waiting in each bite of this Thanksgiving custard pie. Before spooning in the spiced filling, brush the crust with melted bittersweet chocolate.
  • Caramelized Banana Cream Pie. Allow a little extra time to prepare this over-the-top holiday dessert. This make-ahead Thanksgiving pie isn't complicated, but will require an overnight chill in the fridge.
  • Cinnamon Roll Sweet Potato Pie. Take your sweet potato pie recipe to the next level with homemade pie crust cinnamon rolls. While the bourbon-sweet potato filling bakes, roll up swirls of cinnamon and sugar.
