POTATO-TOPPED OVEN SWISS STEAK
For a special touch and a great way to soak up sauce, surround roasted steak and vegetables with a swirl of instant mashed potatoes.

Steps:
- Heat oven to 325°F. In ungreased 13x9-inch (3-quart) glass baking dish, arrange beef in single layer. Top with carrots and onion.
- In medium bowl, mix tomatoes and gravy; spoon over beef and vegetables. Cover with foil; bake 2 hours.
- In 3-quart saucepan, make potatoes as directed on pouch using water, milk and butter. Stir in egg until well blended.
- Remove baking dish from oven. Uncover; spoon potato mixture over hot meat mixture. Return to oven; bake uncovered 15 to 20 minutes longer or until potatoes are set.

SWISS STEAK
My Mom used to make the best swiss steak. This is her recipe with my addition of celery, carrots, potatoes and peas. You can use a swiss steak for this but you can also use a round steak and ask the butcher if he can tenderize it for you. If not you can do it yourself with a meat mallet or use the edge of a saucer to pound out...

- 1. Place skillet or dutch oven on med heat. While pan is heating, cut all visible fat from edges of steak and place in hot pan. While fat is rendering, cut steak into more managable sized pieces. Dredge steak pieces in flour that has been seasoned with salt and pepper. Remove rendered fat pieces from skillet and add small amount of oil or shortening to skillet. Place floured steak in hot skillet and brown on both sides. Do not crowd, if not enough room just do a few at a time and brown in batches. Steak does not have to be cooked through, just browned. Remove steak to plate and set aside. Drain fat from skillet, add steak back in, sprinkle a little of the flour leftover from dredging on top of the steak. This will help to thicken the tomato sauce and make a nice tomato gravy.
- 2. Place sliced onion and celery over steak. Add canned stewed tomatoes, juice and all. Fill empty can about half full with water and add to skillet. Bring liquid in skillet back to a boil, add scraped carrot chunks and potatoes. Pour can of tomato sauce over potatoes, fill can half way with water and pour into skillet. Place lid on skillet, turn down and simmer until vegetables and steak are nearly tender, about 2 hrs. Add frozen or canned peas to skillet, cover and continue cooking until steak is fork tender.
- 3. Notes: If more liquid is needed add a little more water. If skillet is too small to hold all ingredients use a dutch oven. I made this for dinner tonight and I had to switch everything over to the dutch oven, then I had to clean up around the burner where it had spilled out. Serve with crusty rolls and butter.
AL'S BAKED SWISS STEAK
This is a variation on another recipe, which is great as is, but I couldn't make Swiss steak without green peppers or garlic. I also season the meat instead of the flour; it gets a more intense taste that way.

- Preheat oven to 350 degrees F (175 degrees C). Grease a shallow baking dish.
- Cut steak into four portions and pound to 1/4-inch thickness; season with salt, pepper, and seasoned salt. Coat meat evenly with about 1 tablespoon flour.
- Heat oil in a skillet over medium heat. Cook beef in hot oil until browned completely, 3 to 5 minutes per side; transfer to prepared baking dish reserving drippings in the skillet.
- To the drippings, add tomatoes, onion, green bell pepper, beef broth, carrots, celery, garlic, 1 tablespoon flour, and Worcestershire sauce. Bring the tomato mixture to a boil; cook and stir for 2 minutes. Pour the mixture over the meat in the baking dish. Cover dish with aluminum foil.
- Bake until beef is completely tender, about 90 minutes. Sprinkle cheese over beef and return to oven uncovered until cheese is melted, 3 to 5 minutes.

- Cut meat into two portions; pound to 1/4-in. thickness. Combine 1 tablespoon flour and salt; coat meat on both sides. In a skillet, brown meat in oil. - Stir flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle pieces of steak with flour mixture and pound the flour mixture into the meat with a meat mallet or the edge of a sturdy plate.
- Heat vegetable oil in a large skillet over medium heat; cook the floured beef in the hot oil until browned on both sides, about 15 minutes. Reduce heat to low, pour in water, cover skillet, and simmer beef until tender, about 1 hour. Add more water to the skillet if needed to prevent burning.

- Preheat the oven to 325 degrees F.
- Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
- Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
- Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.
