CARAMEL PECAN SHORTBREAD

My grandchildren look for Grandma's "candy bar cookies" every Christmas. I recommend doubling the recipe for these sweet treats because they go so fast. -Dorothy Buiter, Worth, Illinois

Caramel Pecan Shortbread image

Steps:

  • In a large bowl, cream butter and confectioners' sugar until light and fluffy, 5-7 minutes. Beat in milk and vanilla. Combine flour and salt; gradually add to creamed mixture. Cover and refrigerate for 1 hour or until easy to handle., On a lightly floured surface, roll out the dough to 1/4-in. thickness. Cut into 2x1-in. strips. Place 1 in. apart on greased baking sheets. , Bake at 325° for 12-14 minutes or until lightly browned. Remove to wire racks to cool completely., For filling, combine caramels and milk in a large saucepan. Cook and stir over medium-low heat until caramels are melted and smooth. Remove from the heat; stir in the butter, sugar and pecans. Cool for 5 minutes. Spread 1 teaspoon over each cookie. , For icing, in a microwave-safe bowl, melt chips and milk; stir until smooth. Stir in the butter, sugar and vanilla until smooth. Cool for 5 minutes. , Spread 1 teaspoon icing on each cookie; top each with a pecan half. Let stand until set. Store in an airtight container.

Pecan Caramel Candies image

Steps:

  • Preheat oven to 250°. Place pretzels 1 in. apart on foil-lined baking sheets. Top each with a Rolo candy., Bake 3-4 minutes or until candies are softened. (Rolos will still retain their shape.) Immediately top with pecans, pressing to spread candy into pretzel. Let stand until set.

CARAMEL PECANS

My favorite part of the caramel roll is the pecans on top so I created this recipe by combining a couple of different recipes to curb my craving. I'm not a huge fan of sweet rolls so this gives me what I want without wasting the rolls. I will often half this because it gives me plenty since they are addicting!

Caramel Pecans image

Steps:

  • Preheat oven to 250°F.
  • Pour pecan halves into greased 9x13" pan and place into oven for 5 minutes.
  • Melt butter in medium saucepan over medium heat.
  • Stir in brown sugar and corn syrup and cook until sugar is dissolved (this takes at least 3-4 minutes).
  • Remove pecans from oven and pour into saucepan/caramel mixture.
  • Stir to coat and pour back into 9x13" pan.
  • Place back into oven for 45-60 minutes stirring every 15 minutes or so.
  • Remove pan and spread pecans onto parchment paper or silpat (I've used wax paper but it sticks at times-if it does put in fridge and remove when cold).
  • Separate pecans as they cool (2 forks work well).
  • I often HALF this because I can't keep out of them!

Steps:

  • In a large bowl, cream together the butter, 1 cup white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, cocoa, and baking soda; stir into the sugar mixture until well blended. Stir in 1/2 cup of the pecans. Cover, and refrigerate dough for 1 hour, or until firm.
  • Preheat oven to 375 degrees F (190 degrees C). In a shallow bowl, combine the remaining 1/2 cup pecans and 1 tablespoon of sugar; set aside.
  • Press 1 tablespoon of cookie dough around each chocolate coated caramel, forming a ball. Dip one side of each ball into the pecan mixture; and place pecan side up, 2 inches apart on ungreased baking sheets.

  • Place caramels, butter, and water in a microwave-safe bowl. Microwave on high, stirring every 30 seconds, until smooth, about 3 minutes. Stir in pecans.

Chocolate Caramel Treasures image

Steps:

  • Cookies: Cream butter, sugar, egg yolk, milk and vanilla.
  • Sift in flour, cocoa and salt and beat on low speed until dough forms.
  • Wrap in plastic wrap and chill at least 30 minutes or until firm.
  • Roll dough into 1 T balls, coat with egg white, and roll in nuts.
  • Place 1 1/2" apart on greased cookie sheets.
  • Flatten centers of cookies with thumb, leaving a depression.
  • Bake at 350°, 10-12 minutes or until slightly puffed but centers are still soft.
  • Leave cookies on cookie sheet and immediately depress centers of cookies again (I use a wooden spoon handle end).
  • Move to wire racks and cool.
  • Filling: Microwave caramels and cream until melted and smooth.
  • Use a spoon and fill the centers of partially cooled cookies and then cool completely.
  • Chocolate Drizzle: Microwave chocolate until melted and place in resealable plastic bag.
  • Make a small cut in one corner and drizzle a narrow bead of chocolate over the cookies.
  • Chocolate will set in 30 minutes.
