Steps:
- In a large skillet, saute onions in oil until softened. Reduce heat to medium-low; cook, stirring occasionally, for 30 minutes or until deep golden brown. Cool completely., In a small bowl, combine the sour cream, yogurt, onion powder and salt; stir in two-thirds cooked onions. Transfer to a serving bowl; top with remaining onions. Serve with chips and vegetables.

CREAMY SAFFRON SHRIMP WITH GNOCCHI AND CARAMELIZED ONION
It sounds fancy, but this is a simple and delicious meal you can easily make for any occasion. Feel free to add any vegetables you like and make a meal out of it.

Steps:
- Melt the butter in a large skillet over medium heat. Stir in the onion, mushrooms, and brown sugar. Cook and stir until the onion has cooked to a deep brown color, about 10 minutes. Remove the caramelized onions and set aside.
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the gnocchi and return to a boil. Cook until the gnocchi floats to the top, about 3 minutes; drain, and keep warm.
- Place the skillet over medium-high heat, and stir in the shrimp. Cook and stir until the shrimp have turned pink on the outside and are no longer translucent in the center, about 5 minutes. Add the caramelized onions, sour cream, paprika, and saffron. Cook and stir until the mixture begins to simmer, then gently fold in the cooked gnocchi, then season to taste with salt.
- Pour the gnocchi into a serving dish, and sprinkle with shredded basil and Parmesan cheese to serve.

CARAMELIZED ONION-SHRIMP SPREAD

- In 1-quart saucepan, melt butter over medium-low heat. Add onion; cook 15 minutes, stirring frequently. Add garlic; cook 1 minute, stirring occasionally, until onion and garlic are tender and browned. Stir in apple jelly. Cook, stirring constantly, until melted. Remove from heat. Let stand 5 minutes to cool.
- Meanwhile, in small bowl, stir together cream cheese and shrimp. On 8-inch plate, spread shrimp mixture into a 5-inch round.
- Spoon onion mixture over shrimp mixture. Sprinkle with chives. Serve with crackers.

CARAMELIZED ONION DIP
Steps:
- Heat the butter and olive oil in a heavy medium saucepan over medium-high heat. Add the onions and sugar. Cook, stirring constantly, until soft and golden brown, 15 to 20 minutes. Season with salt. Stir in the vinegar and simmer until the mixture is dry. Add the hot sauce if using. Remove the mixture from the heat and allow the onions to cool slightly.
- Mix the cream cheese until smooth in a large bowl. Fold in the sour cream and caramelized onions. Season with salt and pepper. Garnish with chives if using. Can be eaten warm or transferred to the refrigerator to be eaten cold.
CARAMELIZED ONION AND SHRIMP BRUSCHETTA
Caramelized onion and golden raisins add sweet balance to the shrimp. It can be assembled in no time by making the onion spread ahead. Remove the shrimp for a vegetarian option and replace with crumbled feta. I've allowed 30 minutes resting time for the raisins and if the onions aren't made ahead of time another 30 minutes cooling time for the onions once cooked.We enjoyed them for Christmas Eve before the BIG meal.;)

Steps:
- Place raisins in a small bowl and cover with boiling water; set aside for 30 minutes.
- Meanwhile, heat oil in a large skillet over medium heat.
- Add onions and cook, stirring often, until the onions are softened and beginning to color, 5 to 10 minutes.
- Cover, reduce heat to medium-low, and continue cooking, stirring occasionally, until the onions are golden brown, 15 to 25 minutes more.
- Drain and chop the raisins; add to the onions along with capers, dill, pepper, salt & a touch of hot sauce (to balance out the flavors).
- Cook uncovered, stirring, for 5 minutes.
- Transfer to a bowl and let cool for at least 30 minutes.
- Top each slice of bread with 1 tablespoon onion spread and 1 shrimp.

- Heat the butter and oil in the frypan over medium heat.
- Add in onions, cayenne, salt and pepper; sauté for about 8 minutes.
- Add in garlic and cook for 2-3 minutes.
- Reduce heat to medium-low and cook stirring occasionally for 20 minutes more until onions are brown and caramelized; cool.
- In a bowl, beat the cream cheese, sour cream and mayonnaise until smooth.
- Add in onions; mix well to combine.
- Add in Tabasco sauce if using.
- Cover and place in fridge for 2 or more hours before using.
