- Directions Cook 1 lb. fresh haricots verts (tiny green beans) in boiling salted water to cover 1 minute; drain. Plunge green beans into ice water to stop the cooking process; drain well, pressing between paper towels. Stir together 2 Tbsp. light brown sugar, 1 Tbsp. soy sauce, and 1/2 tsp. dried crushed red pepper. Sauté 1 medium-size red bell pepper, sliced; 1/2 medium-size sweet onion, sliced; and green beans in 1 tsp. hot peanut oil in a large skillet over high heat 3 to 5 minutes or until beans look blistered. Sprinkle with 3/4 tsp. seasoned salt. Remove from heat; add soy sauce mixture to green bean mixture, and stir to coat. - Fill a large high sided skillet with some water, adding enough to be just shy of the rim of the pan by about 1 inch. Place over high heat and bring up to boil; add a big pinch of salt and the green beans. Cook for about 5 minutes, the beans should still be crisp. Drain the beans and then run them under some cold water to stop them from cooking. Reserve the beans while you start the onions.
- Return the skillet you cooked the beans in to the cook top over medium heat. Add the almonds and toast stirring every now and then until golden, about 3 to 5 minutes. Remove the almonds from the skillet and reserve. Return the skillet to the heat and add the butter and olive oil and heat until the butter has melted. Add the onions, season with salt and pepper, and cook stirring frequently until the onions caramelize, 20 to 25 minutes. Add the thyme, and cook for another 5 minutes. Add the cooked cooled green beans and almonds, and stir well to combine. Season with salt and pepper, to taste.

This recipe came from a Woman's World magazine. It is very good and has a very pretty presentation. (**Updating to say that I made this recipe with canned cut green beans. I simply drained them and heated them in a little broth for about 3-5 minutes and added them to the recipe instead of fresh green beans. They were very good this way...a nice way to dress up canned green beans.)

- In skillet, melt 1 Tbsp butter over medium heat. Add onion; cook, stirring occasionally, until starting to brown, 7-10 minutes. Add sugar, salt, and Cajun seasoning. Reduce heat to medium-low; cook, stirring often, until onion is soft and golden brown, 5 minutes.
- Meanwhile, bring a large pot of salted water to a boil. Add green beans; cook until tender, 4-5 minutes. (Next time, I will cook longer as mine were not as done as I would have liked them.) Drain well, then add to onion with remaining 1 Tbsp butter. Cook, stirring, until heated through, 1 minute.

- Heat oven to 350°F with rack in middle.
- Spread out pecans on a rimmed sheet pan and bake in oven until pale golden on inside, about 6 to 8 minutes. Cool and coarsely chop.
- Have ready a colander submerged in a large bowl of ice water. Cook beans in a 6- to 8-quart pot of well-salted boiling water, uncovered, until just tender, 5 to 8 minutes. Using a large slotted spoon and/or tongs, transfer beans to colander in ice water to stop cooking, then drain well and dry on towels.
- Heat butter in a 12- to 14-inch deep heavy skillet (preferably straight-sided) over moderately high heat until foam subsides, then add shallot and cook, stirring until pale golden, 2 to 3 minutes.
- Reduce heat to medium and stir in sugar until almost dissolved, then cook pecans, stirring, 1 minute.
- Add green beans, kosher salt, and pepper, and sauté beans, turning them with tongs, until heated through, 2 to 4 minutes. Transfer to a platter and serve.

Season with a big pinch of kosher salt and freshly ground black pepper.
