Steps:

  • For the potatoes: Spiralize the potatoes into fries and soak in water in a container for 1 hour in the refrigerator.
  • For the batter: Combine the flour, paprika, seasoned salt, cayenne, some salt and pepper and 1 cup water in a large pitcher and pour into a large resealable plastic bag.
  • Drain the fries and pat dry. Put them in the bag with the batter and massage to make sure they are coated thoroughly with it. Set aside for 30 minutes so the fries can absorb all the flavors.
  • Heat about 3 inches of oil in a heavy-bottomed pot over medium heat to 365 degrees F.
  • Cook the fries in batches until golden and crispy, about 2 minutes per batch. Drain on a paper towel-lined plate, sprinkle with salt and serve immediately.

  • Bring a large pot of salted water to a boil over high heat.
  • Whisk together the eggs, yolks, Parmesan, Pecorino, pepper and butter if using in a large bowl until well combined.
  • Add the pasta and cook as the label directs. Reserve 1 cup cooking water, then drain the pasta.
  • Meanwhile, cook the pancetta in a large skillet over medium heat, stirring occasionally, until crisp, about 8 minutes. Add the spaghetti and half the reserved pasta cooking water to the skillet and toss to combine.
  • Add the egg mixture and toss to coat. Cook, tossing continuously to avoid scrambling the eggs, until the sauce is creamy, thinning it with the remaining pasta water if it becomes too thick (it should be saucy but not watery), about 1 minute.
  • Divide the pasta among plates and sprinkle with more grated Parmesan.

  • Preheat oven to 425 degrees F.
  • Spiralize both potatoes and use a scissors to cut the longest strings into slightly shorter strands.
  • On a baking sheet, toss together the potato strings, pancetta, oil and pepper, making sure not to crowd the potatoes (use two sheets if necessary). Bake for 30 minutes or until golden.
  • Toss the fries with cheese and more freshly cracked black pepper and serve hot.

Steps:

  • Cut potatoes into curly fries using a curly fry cutter, or cut potatoes into regular fries.
  • Bring a large pot of water to a boil. Put potatoes in boiling water and boil for 3 minutes. Rinse potatoes off in a colander with cold water. Dry potatoes with paper towels and set aside.
  • Preheat oven to 450 degrees F. When oven lets you know you are at the correct temperature, combine paprika, salt, garlic powder, onion powder, cayenne pepper, flour and egg substitute in a small bowl. Add in milk and mix well.
  • Pour fries into a large bowl and add seasoning mixture. Mix well. Dump fries onto a baking sheet lined with parchment paper and spread around evenly (so they aren't overlapping).
  • Bake for 30-35 minutes, flipping every ten minutes so they become nice and crispy.
