Drop Scones (So Easy) image

Steps:

  • Heat oven to 425 degrees Fahrenheit.
  • Grease a cookie sheet.
  • Mix flour, 1/3 cup sugar, baking powder, and salt.
  • Cut in butter until fine crumbs; food processor is best.
  • Place in large bowl; add cranberries and raisins.
  • Beat milk and egg with a fork.
  • Add milk and egg mixture to flour mixture; stir with fork until moistened.
  • Drop by 12 heaping spoonfuls, 2 inches apart onto prepared baking sheet.
  • Sprinkle with the 1 Tablespoon sugar.
  • Bake 13 minutes or until golden.
  • Cool on rack.

Steps:

  • Preheat oven to 375 F.
  • Put flour, soda, powder, salt and cardamom into large bowl, mix well.
  • In another bowl, beat together sour cream, egg, lemon peel and sugar.
  • Cut butter into flour mixture until it resembles coarse sand.
  • Add prunes to flour/butter and toss to distribute evenly.
  • Add sour cream mixture and stir with a spoon until a sticky dough forms.
  • Drop by 1/3 cupfuls of dough 2 inches apart on an ungreased cookie sheet.
  • Bake 20 to 25 minutes, until golden brown.
  • Cool, loosely covered with a dish towel, on a wire rack.

  • In a large mixing bowl, add the orange zest and granulated sugar. Use your fingers to rub the zest into the sugar to release the orange oils. Add in the flour, baking powder, cardamom and salt and whisk it all together.
  • Chop the cold butter into cubes. Add it to the dry ingredients and use a pastry cutter to cut the butter into pea-sized crumbs, ensuring the pieces stay cold and don’t melt into the flour. You could also grate the cold butter instead of chopping it into pieces, but a pastry cutter is still handy to break up the grated butter further.
  • In a small bowl, use a fork to gently whisk the cream, vanilla and egg. Make a well in the middle of the dry ingredients and pour in the cream mixture. Stir until just combined. The mixture will be slightly sticky and maybe a little crumbly. It should hold together. If it is too dry, add a splash more cream. Don’t overwork the dough at this point.
  • Tip the mixture onto a lightly floured surface. Gently press it into a ball and then flatten into a 8 inch/20cm disc. Cut the dough into 8 equal-sized pieces. Place the pieces onto a plate and refrigerate them while the oven is preheated.

  • Add the flour, baking powder, salt, ground cardamom, and brown sugar to a large bowl and whisk the ingredients together for about 30 seconds. Use your fingers to break up any large clumps of brown sugar.
  • Use a box grater to grate the frozen butter into the dry ingredients. Use your fingers to toss the butter and flour together and combine. Add the cream to the flour-butter mixture and use a silicone spatula to mix the cream into the dry ingredients. The dough will start to come together, but there will still be some flour at the bottom of the bowl.
  • Dump the dough onto a work surface and the knead the remaining bits of flour into the dough by folding the dough over and pressing it together. Do this about 3 to 4 times. Form the dough into an 8-inch circle. I sometimes use an 8-inch cake pan to get an even circle. Cut the dough into 8 wedges. Place the scones on a plate and refrigerate for 45 minutes.
