CARROT CHOCOLATE CHIP COOKIES
preheat oven to 350 degrees F. in a medium bowl, swift together 3/4 cup of dark packed brown sugar and then add 3/4 of regular sugar.. add two large eggs to your mixture and then add 1 teaspoon of pure vanilla extract... add 1 ( 12 ) ounce bag of semi sweet chocolate chips or chunks ... add one shaved and minced carrot ... add 2 1/4 of all purpose flour ... add 3/4 teaspoons of baking soda ... and lastly add 1 teaspoon of fine salt.

Combine the flour, baking powder and salt; gradually add to carrot mixture. , Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake until lightly browned, 8-10 minutes. Remove to wire racks to cool.

- Preheat oven to 400 degrees F (200 degrees C).
- Combine butter and brown sugar in a large bowl; mix together with an electric mixer until light and fluffy. Beat in carrots and egg.
- Combine all-purpose flour, whole wheat flour, cinnamon, baking powder, nutmeg and salt in a bowl. Stir into carrot mixture, a little at a time, blending dough well after each addition.
- Drop spoonfuls of dough 2 inches apart onto a baking sheet; flatten with a moistened fork.
- Bake in the preheated oven until cookies are golden and crisp, about 15 minutes. Transfer to wire racks to cool, about 15 minutes.
