Sauteed Green Beans and Mushrooms image

Steps:

  • Blanch green beans in boiling water until just cooked. (We like ours a little crunchy.) Meanwhile, saute sliced mushrooms in butter over medium-high heat until golden, then toss with the drained, blanched beans and some salt and pepper. Top with French-fried onions.

Steps:

  • Saute garlic and mushrooms in butter until tender. Stir in onions; set aside. Steam or cook beans in small amount of water until tender-crisp; drain. Combine beans and mushroom mixture; add pepper and dill weed. Garnish with nuts. Serve immediately.

Steps:

  • Preheat oven to 375°. Cut stem ends off unpeeled garlic cloves. Place cloves on a piece of foil. Drizzle with 2 teaspoons oil; wrap in foil. Bake 25-30 minutes or until cloves are soft. Unwrap and cool slightly. Squeeze garlic from skins; mash with a fork to form a paste., In a Dutch oven, heat remaining oil over medium-high heat. Add green beans and garlic; cook and stir 2-3 minutes. Add water; bring to a boil. Reduce heat; simmer, uncovered, 7-10 minutes or until beans are crisp-tender and water is almost evaporated, stirring occasionally. Add cashews, salt and pepper; toss to combine.

Steps:

  • Place green beans in a pot of boilling water and cook for 5 minutes.
  • Drain beans and immediately place in a bowl of ice-cold water, drain and set aside.
  • In a large skillet, heat olive oil over medium-high heat for 30 seconds.
  • Add onions, cashews, salt and pepper.
  • Stir-fry for 2 to 3 minutes or until onions are softened.
  • Add the cooked green beans, raise heat to high, stir-fry for 2 to 3 minutes or until beans feel hot to the touch.
  • Take care not to burn the cashews during process.
  • Transfer the beans to a serving plate and garnish with chopped parsley.
  • Serve.

  • If using frozen green beans, follow the stovetop cooking instructions on the package. If using fresh green beans trim the ends on all the green beans (this can be tedious) Or you can just buy pre-trimmed beans which are a bit spendier. Fill a medium pot 2/3 with water and bring to a rapid boil. Add beans and boil 6 to 7 minutes, until crisp-tender.
  • Drain beans immediately and rinse them with cold water to stop the cooking process, set beans aside.

Add the mushrooms and cook for 7 minutes, until the moisture has evaporated and they are slightly golden in color. Reduce heat to medium and add the onions, thyme, garlic, ½ teaspoon salt, a couple cracks of pepper, and cook for 5 minutes more. Set side. Cook the green beans in a large pot of salted boiling water for 3 minutes, drain and transfer to an ice water bath for 3 minutes, drain and set aside.
  • Meanwhile, make the cream sauce by melting 3 tablespoons of butter in a medium size pot over medium heat and then add the flour. Cook for 3-5 minutes, stirring the whole time, until the flour is medium blonde in color. While whisking, add the milk and cook for 7 minutes, or until sauce has thickened up a bit and is saucy.
  • Place the green beans in a large bowl, cover with the mushroom mixture and pour all the cream sauce on top. Mix well, place in a baking dish, arrange in one even layer and cover tightly with tin foil. Bake in oven for 25 minutes, remove tin foil and bake another 15 minutes. Cover with casserole with the pecan pieces and fried onions and bake for 10 minutes until the pecans are toasted and the edges of the casserole are bubbling. Serve immediately or set aside for later and re-heat in the oven, enjoy!
