Steps:
- Place cauliflower in a large saucepan; add water to cover. Bring to a boil. Reduce heat. Simmer, covered, until tender, 10-12 minutes. Drain; return to pan. , Meanwhile, combine remaining ingredients in a small saucepan. Bring to a boil. Immediately remove from heat and strain; discard garlic, peppercorns and bay leaf. Add broth to cauliflower. Mash to reach desired consistency.

CAULIFLOWER MASH
It might be tough to imagine that anything could taste better than mashed potatoes. But cauliflower mash captures all the flavors of beloved potatoes, and you won't be able to taste the difference. Not only is this mash cheesy, buttery and silky smooth, it also brings along a stellar lineup of vitamins and nutrients. Plus it's lower in carbohydrates and calories than its potato counterpart.

Steps:
- Bring an inch of water to a boil in a large saucepan. Place the cauliflower in a steamer basket set over the boiling water. Cover and steam for about 5 minutes, until the florets are fork tender. Transfer the florets to a high-powered blender or food processor.
- Add the garlic, cheese, heavy cream, butter, salt and pepper to the cauliflower. Blend until smooth and creamy, 1 to 2 minutes. After 1 minute, if there are still chunks, use a rubber spatula to scrape down the sides, then process again until light, fluffy and completely smooth. Taste and adjust the seasoning if needed.
- Let the mash sit for 2 minutes to settle. Top with chives and serve with extra butter.
CAULIFLOWER MASH-SOUTHERN LIVING
Steps:
- Fill Dutch oven with 1/4" water. Arrange cauliflower in Dutch oven, cover, and cook on MedHi 7-10 minutes. Meanwhile, cook butter in small heavy saucepan over Medium, stirring constantly, just until it turns golden brown, remove from heat, and set aside. Drain cauliflower. Process cauliflower, sour cream, salt, pepper until smooth. Add Parm and chives and butter.
GARLIC MASHED CAULIFLOWER
This recipe is so easy and healthy. I love mashed potatoes, and when I started the South Beach Diet® and couldn't have them, I had to find an alternative. This is an awesome alternative, and people who hate vegetables love it. I do recommend using a large food processor for this recipe.

- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 10 minutes.
- Meanwhile, heat olive oil in a small skillet over medium heat; cook and stir garlic until softened, about 2 minutes. Remove from heat.
- Transfer half the cauliflower to a food processor; cover and blend on high. Add remaining cauliflower florets, one at a time, until vegetables are creamy. Blend in garlic, Parmesan cheese, cream cheese, salt, and black pepper.

- Preheat the oven to 375 degrees F (190 degrees C).
- Bring a large pot of water to a boil. Cook cauliflower in the boiling water until tender, about 10 minutes; drain and set aside.
- Melt butter in the same pot over medium heat. Stir cauliflower, milk, and sour cream into melted butter.
- Mash cauliflower in the pot using a hand blender until creamy.
- Transfer cauliflower mixture to a baking dish; evenly cover with bread crumbs and season with salt and black pepper.
- Baking in the preheated oven until bread crumbs are lightly browned, about 30 minutes.

- Fit a large pot with a steamer basket, and fill with 1 inch of water. Add cauliflower florets, and cover. Bring to a boil over medium-high. Reduce heat to medium, and steam until cauliflower is very tender, about 20 minutes. Remove from heat, and let stand 5 minutes.
- Meanwhile, stir together cream cheese and sour cream in a large bowl until very smooth, about 1 minute. Fold in garlic powder, 1 cup each of the Cheddar and pepper Jack, half of the bacon, and 3 tablespoons of the chives. Fold in warm cauliflower. Spoon into prepared baking dish. Sprinkle with remaining bacon, Cheddar, and pepper Jack.
- Bake in preheated oven until cheese is melted and top starts to brown, 15 to 20 minutes. Sprinkle with remaining 1 tablespoon chives. Serve hot.

- Preheat oven to 350˚F. Trim cauliflower into florets. Bring a large saucepan of salted water to a boil over high; add cauliflower, and boil until just tender, 4 to 5 minutes. Drain cauliflower, and return to saucepan.
- Stir together cream of chicken soup and sour cream in a small bowl; add to cauliflower, and toss to combine. Transfer mixture to a greased (with cooking spray) 8-inch square baking dish. Sprinkle casserole with cheese and panko; dot with butter slices.
- Bake in preheated oven until casserole is bubbly and panko is golden, about 30 minutes. If desired, top with parsley.
