This appetizer is a little bit different than the usual, - it is tasty, and looks pretty on a buffet table! *Picture from Bing - I will post actual photo next time I make these!

Steps:

1. Mix together well all ingredients except parsley. Form into small balls, then roll in parsley to coat. Serve on toothpicks.

1 c finely minced celery
3 oz cream cheese, softened
1/4 tsp salt
couple dashes black pepper
couple dashes cayenne pepper
parsley, chopped

This is my must-have recipe for Thanksgiving, passed down to me by my grandmother. These delicious stuffing balls are crispy on the outside and soft on the inside. She always used white bread for this recipe, but I like to use a nutty whole wheat bread for a little extra flavor.

Grandma Dot's Stuffing Balls image

Steps:

Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil; grease with cooking spray.
Melt butter in a large skillet over medium heat. Add onion and celery; cook and stir until softened, about 5 minutes. Stir in salt, poultry seasoning, and pepper; cook and stir until fragrant, about 1 minute.
Whisk eggs and chicken broth together in a large bowl. Fold in bread cubes and parsley. Pour in onion mixture; mix together until combined.
Shape mixture into 2-inch balls and arrange on prepared baking sheet.
Bake until golden and crisp, about 20 minutes.

Steps:

1. Wash and trim celery and then cut rubs into 3 inch pieces. In a food processor, blend all except paprika, until they reach a mixture like stiff whipped cream. Add salt and pepper to taste. Spoon mixture into celery wells and sprinkle with paprika. Serve chilled.

8 oz pkg. reduced fat cream cheese, softened
3/4 c blue cheese crumbles
1/4 c roquefort cheese, crumbled

GRANDMA'S STUFFED CELERY

My grandma always made stuffed celery at Thanksgiving and Christmas. As kids, we were always so hungry before the holiday meal we would sneak and get a piece of celery to curb our appetite. It was nearly all gone by meal time and we always got fussed at with hint of a grin from Grandma. Now I never have holiday meals without it!

Steps:

Thoroughly dry each piece of celery with paper towels. Mix the cream cheese, olives, garlic, salt, and black pepper in a bowl. Using a knife, spread a generous amount of cream cheese filling down the center indentation of each celery piece. Serve immediately or refrigerate.

Cut celery stalks in half and set aside. Using a food processor or hand held mixer, whip the cream cheese until smooth. Add in bacon, cheese, parsley, chives, salt, pepper and hot sauce. Pulse or blend until all ingredients are combined.
Using a small spoon, fill the celery "boat" with cream cheese mixture. Sprinkle with addition chives and bacon if desired. Serve immediately!
