Cheddar & Chutney Grilled Cheese image

Steps:

  • Lay 6 slices of the bread on a cutting board and brush each slice generously with the butter. Turn the slices over and spread each one with 1 1/2 tablespoons of the chutney. Place 1/2 cup of the Cheddar evenly on each slice and place the remaining 6 slices of bread on top of each sandwich. Brush the tops generously with melted butter.
  • Heat a panini press (see Cook's Note) and grill the sandwiches according to the directions for the machine, until the bread is nicely browned on both sides and the Cheddar is starting to melt.
  • Place the sandwiches on a cutting board and cut each one in half diagonally. Serve hot.

12 (1/4-inch-thick) slices good bakery white bread
1/4 pound (1 stick) unsalted butter, melted
1 (8.5-ounce) jar mango chutney, such as Stonewall Kitchen

  • Not like they are really needed but, take two thick slices of bread, a tablespoon of softened butter and the filling combo. Spread butter on one side of both slices of bread, lay the bread on a work surface, butter-side down, and put the fillings inside.
  • Place sandwich in an already hot nonstick pan (or several, if you are making more sandwiches) on medium heat.
  • Cook 5 minutes, flip, then cook 2 more minutes. Cut sandwich in half and eat.

Steps:

  • Heat griddle or 12- inch nonstick skillet over medium heat.
  • Spread butter on one side of each bread slice. Spread a heaping tablespoon of the chutney on unbuttered side of 4 of the bread slices. Top each with one-fourth of the cheese and ham. Top with remaining bread slices, buttered side up.
  • Place sandwiches in skillet. Cook uncovered about 3 minutes or until cheese is slightly melted and bread is browned. Turn sandwiches over; cook 3 minutes longer or cheese is melted and sandwich is golden brown.

Steps:

  • Combine both cheeses and the spring onions, if using, in a bowl. Pile the cheese mix over four of the bread slices, then spread 1 tbsp chutney over each of the remaining slices. Sandwich the slices together to make four toasties.
  • If you're cooking over a barbecue, put the sandwiches on a griddle for 2 mins, flip and cook for 2 mins more. Transfer to sheets of foil using tongs and tightly wrap. Return to the griddle and cook for 3-4 mins more, or until the cheese is melted. Alternatively, melt a little butter in a pan. Fry the sandwiches for 2-3 mins on each side, weighing them down with a second pan or other heavy heatproof object. Cut the toasties into fingers and serve with more chutney for dunking.

Steps:

  • In a bowl, mix the cheeses, spring onion, chilli, cumin seeds and coriander.
  • Cut the naan in half down the centre. Spread one half with the chutney, top with the cheese mixture, then cover with the other half. Melt the butter in a frying pan over a medium heat until just beginning to foam. Add the naan sandwich and use something heavy like a saucepan to press it down. Fry on one side for 4-5 mins or until golden brown, then turn over and repeat. Both sides should be crisp, with the cheese gooey. Cut in half and serve with extra chutney.

A real old fashioned British style "Doorstep" sandwich, jazzed up a wee bit by adding chutney with mayonnaise and then toasting it........just delicious! The only criteria for these toasted "sarnies" is that you use THICK slices of good quality white Farmhouse style bread; such as home-made or Artisanal crusty bread! And, a good quality Cheddar cheese - preferably mature with good mayonnaise and tangy chutney! Although I have given the method for grilling (broiling) these sarnies, they'll be fine if they're made in an electric sandwich or grilling machine, such as a George Foreman. There is no need to add the chutney separately then, just add it to the cheese and mayonnaise mixture. This is a recipe for one greedy person - please increase the quantities for more greedy people if necessary!!

Steps:

  • Preheat the grill. (Broiler).
  • Mix together the grated cheese with the mayonnaise and mustard powder. Season to taste with salt and black pepper.
  • Spread the cheese mixture on one slice of bread - making sure it reaches right up to the edges. Put it under the grill for 2-3 minutes or until golden, melted and bubbling.
  • Spread the chutney over the other slice of bread and place it on top of the toasted cheese - sandwiching the two pieces of bread together.
  • Put the sandwich under the grill (broiler) and toast on BOTH sides.
  • Remove carefully, cut in half and enjoy!
  • NB: Mix the cheese mixture and chutney together if using an electric sandwich grill.
