APPLESAUCE MUFFINS
Steps:
- Preheat oven to 350°. In a bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Stir in applesauce. Combine flour, baking soda and spices; stir into creamed mixture. If desired, fold in nuts. , Fill greased or paper-lined muffin cups three-fourths full. Bake until a toothpick comes out clean, 20-25 minutes. Cool 5 minutes before removing from pans to wire racks. If desired, sprinkle with cinnamon-sugar.

- Preheat oven to 400 degrees F (200 degrees C). Grease 12 large muffin cups.
- Mix flour, sugar, baking powder, salt, and baking soda together in a large mixing bowl; stir Cheddar cheese into the flour mixture. Pour yogurt, eggs, and butter over the flour mixture; stir until the dry ingredients are just moistened. Spoon the batter into the prepared muffin cups.
- Bake in the preheated oven until the tops just start to lightly brown, 18 to 20 minutes.

- In a large bowl combine baking mix, sugar, and cinnamon.
- In a seperate bowl combine egg, applesauce, milk, oil and cheese.
- Add to dry ingredients.
- Fold in walnuts.
- Grease or spray muffin pan.
- Fill each cup 2/3 full.
- Bake in a 400 degree oven for 15-20 min or until light golden.
- Cool muffins in pan for 10 minutes.
- Run sharp knife around muffin to loosen and remove from pan.

- Heat the oven to 375 degrees. Line a 12-cup muffin tin with bake cups and set aside.
- In a small microwave-safe bowl, melt the butter on high for about 30 to 60 seconds; set aside to cool slightly.
- Sift together the flour, baking powder, baking soda, cinnamon, and salt into a large mixing bowl. When mixing dry and wet ingredients for muffins, gently stir just until the flour disappears. This will produce muffins with a nice crumbly texture.
- In another large bowl, whisk together the eggs and brown sugar. Stir in the applesauce and melted butter until the mixture is smooth. For mess-free muffins, use an ice-cream scoop to spoon the batter into the bake cups.
- Pour the apple mixture over the flour mixture. Mix with a wooden spoon until combined (it's ready when you can't see any traces of flour).
- Fill the bake cups about two-thirds full with batter. Bake for 20 minutes or until light brown.

- Spray muffin tins with nonstick spray.
- Mix flour, sugar, baking powder, cinnamon, and salt in a bowl.
- Mix in beaten eggs, applesauce and melted butter. (by hand, do not need mixer).
- Evenly scoop mixture into muffin pans.
- Sprinkle crystal sugar sprinkles on tops of muffins.
- Bake for 18 to 20 minutes. Test to see if toothpick comes out clean.
