Steps:

  • GET THE EGGS COOKING: Bring a small pan of water to the boil. Gently lower in the eggs and boil for 8 minutes, then lift them out and plunge them into a bowl of cold water until you need them.
  • MAKE THE DRESSING: Whisk together the olive oil, lime juice and sweet chilli sauce in a small bowl. Finely slice the spring onions on the diagonal, then mix them into the dressing.
  • LAYER UP THE DISH: Shell the eggs and slice into rounds. Pull the lettuce apart and divide the leaves between two plates. Spoon the sweetcorn on top of the lettuce and scatter the tomato halves on top. Finish with the prawns and egg slices and douse everything with the chilli dressing.

SEAFOOD SALAD WITH SHRIMP AND CRAB

This is my favorite spring and summer salad. It's a great opening act for any seafood dinner and it makes a really good snack or appetizer. I like it with Captain's Wafers. After mixing it, I pack it into individual 1 cup containers so it's ready to grab and go. I take it to work for lunch quite often. Cooking time is chilling time.

Seafood Salad With Shrimp and Crab image

Steps:

  • Cut each shrimp into 2 or 3 pieces.
  • Chop crabmeat into pieces about the size of the shrimp pieces.
  • Mix all ingredeints together and chill for 4 hours to let the flavors blend.
  • It looks like a lot of mayo at first but after it's chilled it doesn't look like so much.

1 lb shrimp, cooked, peeled and de-veined, 41-60 count
24 ounces imitation crabmeat
1/2 cup celery, finely chopped
1/4 cup onion, finely chopped
1 cup mayonnaise
1/4 teaspoon black pepper
1/8 teaspoon Accent seasoning (MSG)
1/4 teaspoon salt
1/4 teaspoon garlic salt

AUSSIE RICE SALAD

Updated after so-so reviews:D Posted for Zaar World Tour 2005. From an Australian recipe website. Prep time does not include cook time for rice. Although I've stipulated imitation bacon bits, you are welcome to use real bacon if you'd prefer. Update: I finally tweaked this to a satisfactory end, so if you'd still like to try this I recommend it. I reduced the soy sauce and allspice, and upped the mayonnaise a bit. I really don't like salads too big on mayonnaise, but I still thought this could do with a bit more. I also agreed that the allspice and onions were tasty together, and the vegetables added a pleasing sweetness. I think water chestnuts instead of the bacon bits would be nice too. Thanks if you try this again!

Louis Seafood Salad image

Steps:

  • Combine all dressing ingredients including any desired optional ingredients, and refrigerate, covered, for several hours before serving.
  • Divide greens onto 4 individual salad plates or place in a large serving bowl.
  • Top with shrimp and/or crab and/or lobster, and drizzle with lemon juice.
  • Garnish with any or all of the optional ingredients, the more the better.
  • Sprinkle with chopped chives.
  • If serving individually, top each salad with a dollop of Louis Dressing, serving the remainder on the side.
  • If serving from a large serving bowl, present, add dressing, and toss the salad at the table.
  • Serve additional dressing on the side.
